🥥 Coconut and Cherry Lollies 🍒

😀 Suns out, lollies out!!

Ahhh...another gorgeous sunny day, time for my coconut and cherry lollies! ☀️
They're SO fruity, creamy and fresh! Dairy free and oh so satisfying, these lollies are sure to cool you down this summer, only 5 ingredients too!

🍓 Ingredients:

400ml of coconut milk
200ml of coconut cream
2-3 tablespoons of honey/maple syrup
300g of frozen cherries or fresh, pitted
1 teaspoon of vanilla extract

Method:

1. Blend your coconut milk, vanilla extract, coconut cream and honey in a blender and set aside.

2. Rinse out your blender and purée your cherries and pour a little into your ice lolly mounds. Pour your coconut cream mixture and now alternate with your cherry purée. Freeze overnight and enjoy!

As I type this, my back hurts, my feet ache more than ever, and I'm very tired from baking all day, ready for week 2 of nikibakes. And then. I think of my mum. The OG entrepreneur.

🧿 My mum is not an ordinary woman. She worked SO hard, harder than any woman I have ever met in my life. She raised me and my brother with respect, grace, and so much love. She put her heart on the line for us, literally.

This I'm celebrating every single woman who's worked hard, working hard for their dreams and the women that sacrifice everything for their family and loved ones every single damn day.

My mum is my motivation, and I'm here with my baking stall because of her love and support. My aches and pains are worth this. ✨️
