I was kindly gifted their latest cookbook, and I must say, all the recipes are incredibly delicious!! I am working my way through them all but just had to share the all-goes-in-gyoza, especially this time of year where there are loads of veggie and meat leftovers! It's such a genius recipe, I must say.

🎄 2 EDIBLE XMAS GIFT IDEAS! 🎁

🍫 Right, I'm giving you 2 of my most requested recipes when it comes to sweets this Christmas. They are quick to make, vegan, and gluten-free as well. What's not to like? 🤗

Chocolate-Orange Dipped Mango 🥭

Ingredients:
Makes 1 bag 

• 200g of dark chocolate, melted
• 1 tsp of orange extract 
• 150g of dried mango

Method:

Add your orange extract to your melted chocolate, dip in your dried mango strips, and lay it out on greaseproof paper. Store in the fridge for 30 minutes, and it will be ready for gifting or eating!

Chocolate-Dipped Brazil Nuts 🍫

Ingredients: 
Makes 1 bag 

• 200g of dark chocolate, melted
100g of milk and white chocolate, melted 
• 1 tsp of vanilla extract 
• 180g of brazil nuts 

Add your vanilla extract to your melted chocolate, dip in your Brazil nuts, lay it out on a sheet of greaseproof paper, and decorate as desired. Store in the fridge for 30 minutes, and it will be ready for gifting or eating!

CHOCCY BOX BROWNIES 🍫

SAVE this recipe for all that leftover chocolate after the big day! 🎄

INGREDIENTS:

150 g of dark chocolate
160g of salted butter
3 large eggs
1 tsp of vanilla extract
260g of light brown sugar
50g of plain flour/gf plain flour
40 g of cocoa powder
½ tsp of baking powder
80 g of ground almonds
A handful of chocolate box sweets

👩🏻‍🍳 METHOD:

Preheat the oven to 180C. Line your brownie tin with greaseproof paper, set aside.

Melt the dark chocolate and butter together in a bowl over a pan of simmering water (or in the microwave in bursts. Stir and leave to cool slightly.
Once the chocolate and butter mixture has cooled slightly, then add in the vanilla extract, sugar, and eggs and mix together using a whisk.

When the chocolate is thoroughly mixed in, sieve the flour, cocoa powder, and baking powder over the mixture, and then add the ground almonds. Fold into the mix gently, in a figure of eight. This will help to keep the air in.

Pour the mixture into your lined baking tray.

Arrange the chocolates on top of the brownie mix evenly, so there is 1 piece per portion of brownie. Push the chocolate into the mixture slightly. Bake for 20-25 minutes.

Take out of the oven and leave to cool in the tray. Dust with a little icing sugar and serve right away. Enjoy!

CHRISTMAS COOKIES - RECIPE

Ingredients:

200g of unsalted butter
50g of dark brown sugar
100g of light brown sugar or coconut sugar
1 large egg and 1 egg yolk, at room temperature
2 teaspoons of vanilla extract
1 tsp of ground cinnamon
1/2 tsp of ground ginger
250g of gluten free/ regular plain four
1 teaspoon of cornflour
1 teaspoon of bicarbonate of soda
1/2 teaspoon of smoked sea salt
2 tablespoons of almond milk
150g of caramelised white chocolate, chopped up
120g of cranberries
Icing sugar, to decorate

Method:

Melt the butter over medium heat and stir or whisk constantly. Once melted, the butter will begin to foam. Keep stirring/whisking. After 5-7 minutes, the butter will begin browning and you’ll notice lightly browned specks begin to form at the bottom of the pan. It will have a nutty aroma. Once browned, remove from heat immediately and pour into dish to cool down completely.

Once cooled, add the brown butter into a large bowl (or the bowl of your stand mixer). Using a silicone spatula or stand mixer fitted with a paddle attachment, beat the chilled brown butter for 1 minute on medium speed until completely smooth and creamy.

Add the sugars and beat on medium high speed until light in colour and combined, about 2 minutes. Beat in the egg, egg yolk, and vanilla extract on a high speed. Scrape down the sides and bottom of the bowl as needed.

CHEATS CHRISTMAS DAY CRUNCHY POTATOES 🥔

If like me you have limited oven space but want to do your Christmas feast justice, then look no further than my cheats Christmas Day Crunchy Potatoes!

They’re the real deal folks, soft and fluffy on the inside, crunchy on the outside, and full of flavour and seasonings. Only a couple of things that need to be adhered to such as Maris Piper potatoes being a must and for your oil in the skillet/pan to be hot hot hot for that crunch otherwise it will never be achieved.

🎄 Ingredients:

1kg of Maris piper potatoes, parboiled in salted water
100ml of coconut oil or vegetable oil
1-2 tsp of sea salt flakes
1 tsp of sage powder
1/2 tsp of turmeric powder
1/2 tsp of black pepper
1/2 tsp of Aleppo chilli flakes (optional)

Method:

As soon as your potatoes are par boiled, drain and leave to cool for no more than 5 minutes.
In a very large skillet or pan, heat your chosen oil until piping hot.

Peel the potatoes roughly and chop them into roast potato chunks on the diagonal to give more surface area.

Once the pan is hot, add in your potatoes carefully and season with all your spices. Turn the heat down to medium and turn the potatoes after 5 minutes, or you see the edges turning golden brown and crispy.

The whole process should take around 25-30 minutes, season for taste and serve with your roast and other sides, garnish with extra sea salt flakes and chilli flakes, if using. Heaven.

🟤 Mint Aero Rocky Road 🟢

A quick and no-bake sweet treat, perfect for Christmas gifting! 🎁 🎄

Ingredients:

400g of Milk and Dark Chocolate, melted and cooled

1/2 tsp of peppermint extract

150g of shortbread/gf shortbread, chopped up

150g of Mini White and Pink Marshmallows

200g of Mint Aero Bubbles, crushed plus extra, for topping

🟢 Method:

Line a 9×9″ square tin with greaseproof paper and set aside.

Simply add your melted chocolate to a large bowl and add in the chopped biscuits, mini marshmallows, peppermint extract and Aero Bubbles and quickly fold together.

Pour into your prepared tin and spread so it's even, sprinkle on more mint Aero pieces so they stick and refrigerate until set.

Chop up the pieces into either 4×4 for 16 larger pieces, or 5×5 for 25 smaller pieces. Enjoy!

🎄 Christmas Is Coming... 🍪

🤤 Caramelised white chocolate, cranberries, warming ginger, and cinnamon…the perfect Christmas cookie with every bite.

Bakewell Blondie - THE cosy autumnal bake 🍂 🍁

Jammy, rich, fudgy and bursting with almonds, this Bakewell blondie is the perfect fusion bake we say!

👩🏻‍🍳 Ingredients:

250 g of unsalted butter (melted)

125 g of light musavado sugar

125 g of light brown sugar

3 medium eggs

1 tsp of organic almond extract

100 g of ground almonds

200 g of gf plain flour

1 tbsp of cornflour

200 g white chocolate chips

250 g of raspberry jam/cherry jam

50 g of flaked almonds

Icing sugar, for dusting

Method:

Preheat your oven to 180C/160C Fan and line a tin with greaseproof paper.

In a large bowl, add your melted butter and sugars and beat until smooth. Add in the eggs and organic almond extract and beat again until smooth.

Add in the flour, ground almonds and cornflour and beat until a thick blondie mixture is made which at this stage will take minutes! Finally, add in your white chocolate chips and fold through.

Next, pour the mixture into the tin, dollop on the jam, and lightly swirl through the blondie mixture but don't over swirl. Sprinkle over the flaked almonds and bake the blondies in the oven for 30 minutes.

Leave the blondies to cool in the tin until cool and serve right away OR put them in the fridge for an hour or so once they have cooled to create a lovely fudgy texture! Finish off with a liberal dusting of icing sugar. ENJOY!

👩🏻‍🍳 Price per person: £99 + 0.99p booking fee per person

🇹🇷 On the day, you will make the following:

• Sucuk Eggs, a dish where slices of sucuk (Turkish sausage made with spices and garlic) are fried in a pan and then eggs are cracked into the pan and cooked with the sucuk.

• Sigara Börek are Turkish pastries, filled with a mixture of feta cheese and parsley, then rolled into small, thin cylindrical shapes resembling ci******es (hence the name "sigara" which means "cigarette" in Turkish).

• Cacik, a refreshing Turkish side dish or cold soup made with yogurt, finely chopped or grated cucumbers, garlic, olive oil, and dill. It's often seasoned with salt and sometimes with mint or other herbs, and served chilled. It is similar to the Greek dish tzatziki.

• Ezme is a spicy Turkish salsa or dip made from finely chopped vegetables such as tomatoes, onions, and peppers, mixed with parsley, garlic, olive oil, lemon juice, and pomegranate molasses.

🟠 NIKI’S CREAMY BUTTERNUT SQUASH SOUP 🍲

Mmmm..creamy, tasty and EASY to whip up, you gotta try my squash soup! Gluten free and vegan, everyone can enjoy it…warm up and enjoy with your loved ones…

Ingredients:

1 teaspoon of sea salt and cracked black pepper
2 spring onions or 2 leeks
2 medium carrots
2 cloves garlic
2 sticks of celery 1 teaspoon of chilli flakes
1 teaspoon of dried rosemary 3 tablespoons of olive oil
2 fresh sage leaves
2 kg butternut squash or prince squash
2 litres organic of vegetable stock
400ml of coconut milk

Method:

1.Peel and finely chop the spring onions, carrots and garlic, then trim and finely chop the celery.

2. Heat a couple of lugs of olive oil in a large saucepan over a medium heat, add the spring onion, carrot, garlic, celery, chilli, rosemary and a good pinch of sea salt and black pepper, then cook gently for 10 minutes, or until sweet and soft.

3. Meanwhile, halve, deseed and rough chop the squash. When the time’s up, add the squash, coconut milk and veg stock to the pan. Bring to the boil and simmer for 30 minutes .

4. When the squash is tender, whiz the cooled soup with a stick blender or pour it into a blender and pulse to a smooth purée – leave it slightly chunky, if you prefer. Season to perfection again with salt and pepper, then divide between the bowls and top with microgreens. Enjoy!
