🥪 TAJIN CHRISTMAS BACON, HALLOUMI, AND CRANBERRY PANINI 🤤
Yep, you read that right, folks. A luxury Christmas panini RIGHT HERE. makes your meals more bueno.
🙋🏻♀️ You just have to try this combo for yourself and see how mouthwatering it is! It's an easy way to add more flavour to any dish!
👩🏻🍳 For this recipe, I went for the Tajín Clásico Seasong, which is a unique blend of 100% natural chili peppers, lime & sea salt that makes everything bueno, even More Bueno. The honeyed halloumi and salty bacon is such a good combo, but with Tajín Clásico Seasong, it goes up another level! 👍🏻
💥 INGREDIENTS:
2 panini baguettes, sliced in half
4-6 rashers on unsmoked bacon
1 block of halloumi, patted dry and sliced
2 tablespoons of honey
2-3 tablespoons of cranberry sauce
Up to 1- 2 tsps of Tajín Clásico Seasong
🧂 METHOD:
Preheat your oven to 180°C and line a wire rack that is inserted into a sheet pan with greaseproof paper, set aside.
Grab your bacon and pat dry, make sure there is no moisture at all, and lay the slices flat onto your lined wire rack.
Sprinkle over a bit of your Tajín Clásico Seasong and pop in the oven for about 5-7 minutes or until the bacon has crisped up - Pro-tip: Pop on your panini bread slices face down for the last couple of minutes to crisp up the bread and heat it through.
Whilst this is happening, grab a pan and heat it up so it is absolutely hot before adding a few slices of your halloumi.
Sprinkle with more Tajín Clásico Seasong and brown on either side for a couple of minutes and add your honey halfway through so it starts to caramelise onto the cheese. Repeat the process for all of your halloumi slices, plate up, and set to one side.
You are now ready to assemble! Grab your sliced panini and spread cranberry sauce on either side.
Layer up with your bacon and honeyed halloumi slices and finish with the other panini.

Chocolate-Orange Dipped Mango 🥭
Ingredients:
Makes 1 bag
• 200g of dark chocolate, melted
• 1 tsp of orange extract
• 150g of dried mango
Method:
Add your orange extract to your melted chocolate, dip in your dried mango strips, and lay it out on greaseproof paper. Store in the fridge for 30 minutes, and it will be ready for gifting or eating!
Chocolate-Dipped Brazil Nuts 🍫
Ingredients:
Makes 1 bag
• 200g of dark chocolate, melted
100g of milk and white chocolate, melted
• 1 tsp of vanilla extract
• 180g of brazil nuts
Add your vanilla extract to your melted chocolate, dip in your Brazil nuts, lay it out on a sheet of greaseproof paper, and decorate as desired. Store in the fridge for 30 minutes, and it will be ready for gifting or eating!

🎀 Simply boil a tin of condensed milk for 2 hours, allow the tin to cool completely, decant into your gifting jar, and then add a touch of sea salt , give it a good mix. And it's ready!! 😉
🟤 Mint Aero Rocky Road 🟢
A quick and no-bake sweet treat, perfect for Christmas gifting! 🎁 🎄
Ingredients:
400g of Milk and Dark Chocolate, melted and cooled
1/2 tsp of peppermint extract
150g of shortbread/gf shortbread, chopped up
150g of Mini White and Pink Marshmallows
200g of Mint Aero Bubbles, crushed plus extra, for topping
🟢 Method:
Line a 9×9″ square tin with greaseproof paper and set aside.
Simply add your melted chocolate to a large bowl and add in the chopped biscuits, mini marshmallows, peppermint extract and Aero Bubbles and quickly fold together.
Pour into your prepared tin and spread so it's even, sprinkle on more mint Aero pieces so they stick and refrigerate until set.
Chop up the pieces into either 4×4 for 16 larger pieces, or 5×5 for 25 smaller pieces. Enjoy!

A yummy bundt cake using our SWELL carob powder and a lovely hint of ground cardamom. It's a great alternative to chocolate as it's caffeine free, gluten free and vegan.

🎄Carob & Cardamom Christmas Bundt 🤎
💚 Ingredients:
100g of carob powder
2 tsp of ground cardamom powder
350g of self-raising four
2 tsp of baking powder
500g of light bown sugar
4 eggs
1 tbsp of vanilla extract
270g of unsalted butter, softened
For the icing:
2 tbsps of carob powder
2 tbsps of icing sugar
❤️ Method:
Preheat the oven to 180°C, grease your bundt, and set aside. Put the carob powder in a bowl and add 200ml of boiling water and stir until smooth. In a separate bowl, sieve the flour with the baking powder, cardamon powder and sugar. Add the eggs, vanilla, and butter to the carob mixture and beat for 1 min using an electric whisk.
Gradually add the egg mixture to the flour mix, whisking well after each addition. Pour the mixture into a greased tin and bake for 45-50 mins. Let it cool in the tin for 10 mins, then turn out onto a cooling rack.
To make the chocolate icing, simply add the carob powder to the icing sugar and some water to create a thick yet pourable consistency. Pour over your cooled bundt and decorate with Christmas decorations as desired. Enjoy!

Of course, there was Nigella, Jamie Oliver and Delia Smith but there was also a very special lady. came to the culinary scene as a beautiful, vibrant, and charismatic chef and hit the screens of - 👩🏻🍳 I would rush home after school to watch her cooking show.
She would wok these incredible episodes around the beauty of Asian food, making it accessible for everyone in the UK. Delicious, fast, and yummy Asian recipes that I would often replicate at home whenever I could, I used to call it fakeaway Fridays - much to my families delight (and delicious disasters sometimes!).
😍 In 2017, I was lucky enough to attend a charity dinner with and who was cooking on the night? The wonderful ching!! It was not only the night I met my dear friend but also I met Ching in real life!! She hugged me and said this to me 'you are amazing, you will go far, I love your recipes.' In fact, when she approached my table she made me stand up and said this in front of everyone who was sitting at the table. It was a moment I will never forget. 🫠

Okonomiyaki pancakes are truly a staple in Japanese cuisine. They're cheap, quick to prepare, and extremely versatile.
😍 Traditionally, these gorgeous pancakes are also topped with a variety of sauces from Japanese mayonnaise called kewpie mayonnaise, ketchup, and the traditional pancake sauce. I've topped mine with an adaptation of the Okonomiyaki sauce so everyone can try it.

🍂 Mushrooms need very little to shine, and my favourite way to enjoy them is simply sautéed and served over crusty toast, a classic that never fails to impress.
Any kind of mushrooms will work here, even the humble buttons, maitakes (or “hen of the woods”), baby shiitakes, and oysters mushrooms in bright yellow and dusty rose make for a happy and pretty party in a pan. 🤩🍄👩🏻🍳
🍄 Ingredients:
2 tablespoons of olive oil
70g of coconut butter/any butter
450g of mushrooms (wild or fresh shiitakes, portobello, or cremini), sliced or roughly chopped
1 garlic clove, crushed (optional)
A pinch of sea salt and freshly ground black pepper
The juice of 1/2 a lemon
A handful of young spinach
A handful of cherry tomatoes
A drizzle of balsamic glaze
1 tablespoon of tamari
🍄 Method:
1. Heat the oil and your chosen butter in a frying pan until the butter begins to foam.
2. Add the mushrooms to the pan. Let them sit for a couple of minutes, then begin to move them around. Add the garlic and season well.
3. Once the mushrooms are soft, after about 5 minutes, add the lemon juice and tomatoes and cook for 1 minute.
4. Next, add the tamari, crank up the heat, and cook for 3 minutes to reduce the liquid a little. Just before serving, stir in the spinach.
5. Serve on top of char-grilled or toasted sourdough bread, which has been drizzled with oil and rubbed with garlic, and a flourish of balsamic glaze and extra raw baby leaf spinach.
2nd Variation: Add crispy sage and watercress!

NIKI’S THAI FRIED CHICKEN RICE 🍚
😋 Ingredients:
For the rice:
300g of cooked rice (preferably a few days old)
2 boneless chicken breast, chopped into nuggets
2 tablespoons of soy sauce/tamari sauce
2 to 3 tablespoons of vegetable oil
4 spring onions, sliced
1/2 teaspoon of ground turmeric
1/2 teaspoon of garlic powder
1 teaspoon of thai spice
A sprinkling of black sesame seeds
A sprinkling of chilli flakes, optional
1 bell pepper, any colour or 2 romano peppers, sliced
Fresh mint and a wedge of lime, for garnish
For Fried Rice Sauce:
3 tablespoons of chicken stock
2 tablespoons of fish sauce
2 tablespoons soy sauce/tamari sauce
1 tablespoon lime juice (or more to taste)
1/8 teaspoon of black pepper – combine all of these ingredients, ready for the rice
🥄 Method:
Start off by adding your chopped chicken in a bowl and add your soy/tamari sauce. Stir well and set aside.
Heat a wok or large frying pan over high or medium-high heat. Drizzle in 2 tablespoons of oil and swirl around, then add the spring onion plus the garlic powder, ground turmeric and thai spice.
Stir-fry for 1 minute, then add the chicken. Stir-fry 2 to 3 minutes, or until chicken turns evenly opaque.
Add your bell pepper and stir-fry 2 to 3 minutes, until everything is cooked through. If your wok or pan becomes too dry, add a little more oil or 1 to 2 tablespoons chicken stock.
Keeping the heat high, add the rice. Stir-fry using a spatula or other flat utensil to gently lift and turn the rice.
Gradually begin adding the stir-fry sauce, 1 to 2 tablespoons at a time. Continue stir-frying 6 to 10 minutes, or until all the sauce has been added. Continue stir-frying everything together over high heat 2 more minutes or until rice is light and falls easily into separate grains.
Remove from the heat and taste for seasoning, garnish with black sesame seeds, chilli flakes, mint & lime.
🇮🇹 😍 Sun Dried Tomato, Parsley and Olive Focaccia 🍅 🌿
🍅 Ingredients:
500g strong plain white flour
1/2 tsp of sea salt
2 tsps of dried parsley
7g sachet or 2 flat tsp of fast action yeast
300ml warm water
8-10 Sun-Dried tomatoes
3 tbsp of Extra Virgin Olive Oil, plus 1 extra tbsp for brushing
75g pitted black and green olives, chopped roughly and some whole
1-2 tsps of coarse/flaky sea salt for sprinkling
👩🏻🍳 Method:
Sift the flour and salt into a large bowl, stir in the yeast and half the dried parsley. Gradually add the warm water and olive oil to form a dough.
Turn onto a floured work surface and knead for 10 minutes until elastic, then place in a bowl, cover and leave to rise in a warm place for 1 hour or until doubled in size.
Meanwhile, soak the Sun-Dried tomatoes in warm water for 20 minutes, drain, pat dry and chop roughly.
Pre-heat the oven to 200ºC/Gas Mark 6. Lightly oil a large shallow roasting tin or baking tin approximately 28x22cm.
Knock back the dough on a work surface and incorporate the sun-dried tomatoes and olives, kneading them into the dough.
Dip your fingers in olive oil and gently press out the dough until it fills the tin evenly and is roughly 2cm thick. Stud with extra olives, sun-dried tomatoes and dried parsley.
Brush with olive oil and make small indentations all over the surface of the dough. Cover with a damp tea towel and leave to rise for 30 minutes.
Scatter over the salt and bake for 20-25 minutes until golden brown. To serve, cut into squares or slices.

🍂🤗 Dark Chocolate and Squash Oat Bars 🧡🎃
My chocolatey squash oat bars are all things Autumn in bar form! No flour, no refined sugar, no added oil... just 1 bowl, some autumnal spices, and full on deliciousness.
🍁 Ingredients:
140g of oats
1 tsp baking powder
1 tsp of cinnamon and nutmeg
150g of squash puree
2 tbsp of honey or applesauce
200ml of almond milk
2 tbsp of almond butter
A handful of sunflower and pumpkin seeds
70g of dark chocolate chunks
🍫 Method:
Preheat the oven to 185 C/gas mark 4. In a large bowl, add the oats, baking powder, spices, and dark chocolate. Add in the sunflower and pumpkin seeds, and mix well.
In the baking dish, mix the squash puree, almond milk, and honey/applesauce until mixed in. Add the oat mixture and mix well for a few seconds. Even it out in the baking dish. Sprinkle with the extra seeds.
Bake for 35 minutes. Let the mixture sit for another 10 mins in the oven, then remove. Cool for 10 mins, then slice and serve with extra melted dark chocolate drizzle.
These bars keep in a closed container in the fridge for up to 4 days

🎃 DIY Pumpkin Spice Syrup ✨️
As promised, here's my easy and speedy pumpkin spice syrup! I promise you'll never look at other artificial syrups again.
🟧 Ingredients:
250g light brown soft sugar
1 tsp of vanilla extract
1 tsp of ground cinnamon
2 tsp of ground ginger
A fresh grating of nutmeg
2 tbsp of pumpkin purée (can use canned)
🍂 Method:
1.) Tip all the ingredients into a pan with 125ml water, and cook over a medium heat for 5-10 mins until the sugar has dissolved and you have a thin syrup.
2.) Remove from the heat and leave to cool. Transfer the syrup to a sterilised bottle or jar. Will keep in the fridge for up to two weeks. Enjoy!!
☕️ You can use my syrup as a base for your pumpkin spice lattes! Just use 1-2 tablespoons per drink, add your coffee base (or leave it out!), and hot milk. You're good to go. 🎃

😎 Niki's Blackberry Chia Jam and Almond Loaf 💜
So, blackberry season is well and truly over. Once of the best and nutritious ways to enjoy them all year round is blackberry chia jam, of course it can get a but boring to have it on toast and with porridge all the time so why not jazz it up a bit with my blackberry chia jam and almond loaf? Gluten-free and dairy free, it’s a bake for everyone to enjoy! 🌼🥰🙏🏻
👩🏻🍳 Ingredients:
For the Blackberry Chia Jam:
1 large handful of blackberries, fresh or frozen
4 tbsp of maple syrup
3 tbsp of chia seeds
1 tbsp of lemon juice
For the Almond Cake:
185g of coconut butter/regular unsalted butter
150g of coconut sugar
1 orange, finely grated zest
1 small handful of flaked almonds
2 large eggs
2 tbsp of gluten-free plain flour/regular plain flour
A pinch of sea salt
160 of ground almonds
1 tsp of almond extract
💜 Method:
1. Preheat the oven to 180°C, and grease and line a 23 x 12cm loaf tin with baking paper, set aside.
2. In a saucepan, gently heat the coconut butter, coconut sugar, and orange zest until the butter is melted and sugar has dissolved. It should not boil. Remove from the heat to cool.
3. Next, whisk in the almond extract and eggs. Sift in the gluten-free flour, baking powder, and sea salt, and add the ground almonds. Whisk gently until smooth.
4. Pour the mixture into the tin and top off with your blackberry jam. Press down gently and then finally scatter over the flaked almonds.
5. Bake for 50-60 minutes or until a skewer inserted just comes out clean, and the loaf begins to pull away from the sides. Allow to cool in the tin.

Niki’s Cinnamon Pancakes with Dark Chocolate Sauce 🥞🍫
🤗 Warm, cosy, soft pillows of deliciousness, that’s what these pancakes are! Vegan and gluten-free, these are the pancakes to make this autumn. In fact it’s the recipe we turn to time and time again for a base pancake. Feel free to sub the cinnamon for ground ginger, mixed spice, pumpkin pie spice...ideas ideas! 🍁🍂
🍁 Ingredients:
240g of plain flour (gf works too)
2 tablespoons of coconut sugar
1 tablespoon of ground cinnamon
1/4 teaspoon of sea salt
1 tablespoon of baking powder
240ml of almond milk
2 teaspoons of apple cider vinegar
1 tablespoon of vanilla extract
2 tablespoons of coconut oil, melted
150g of 70% dark chocolate, melted with 1 teaspoon of raw cacao powder
🍂🥞 Method:
Start off with your makeshift buttermilk. In a small bowl, measure out your almond milk and add the acv to create the buttermilk mixture. Set this aside while you prep your dry ingredients.
In another large bowl, add the flour and whisk the remaining dry ingredients.
Now pour in the buttermilk, the melted coconut oil, and vanilla extract.
Whisk the batter gently, don’t worry if there are small lumps.
Heat your pan over a medium-high heat and pour a small ladle full of the batter into the middle of your pan.
After a couple of minutes, small bubbles will form around the edges, and the edges will also appear cooked, flip, and cook on the other side for another 2 minutes.
Once you’ve stacked them high on your serving plate, drizzle over your raw cacao drizzle and enjoy immediately.

🧡 Golden Pumpkin Scones 🍂
Ingredients:
250g of plain flour (GF works too)
2 tsp of baking powder
1 tsp of organic vanilla extract
120g of light brown sugar
120g of pumpkin puree
100g of natural kefir yoghurt
1 medium egg
120g of butter, very cold/frozen
½ tsp of sea salt
Icing sugar drizzle, optional
1 tsp of pumpkin pie spice
½ tsp of ground cinnamon
½ tsp of ground turmeric
🍂 Method:
1. Preheat oven to 200°C and adjust your baking rack to the middle-low position. Line 1 or 2 large baking sheets with greaseproof paper, and set aside.
2. Whisk the flour, baking powder, cinnamon, pumpkin pie spice, turmeric powder, and sea salt together in a large bowl. Grate the very cold/frozen butter and add it to the flour mixture and combine it with a fork, until the mixture comes together in pea-sized crumbs. Set aside.
3. Whisk the kefir yoghurt, the egg, pumpkin puree, brown sugar, and vanilla extract together in a small bowl. Drizzle it over the flour mixture and then mix it all together until everything appears moistened.
4. With floured hands, work the dough into a ball as best you can and transfer it onto a floured work surface. Press into a neat 8-inch disc and, with a very sharp knife, cut into 8 equal wedges.
5. Place scones at least 2 inches apart on the prepared baking sheet(s). Bake the scones for 20-25 minutes or until lightly browned. Remove from the oven and allow to cool for a few minutes before drizzling over some icing sugar glaze on top, this is optional but we recommend it!
🧡 These scones are best enjoyed right away, though leftover scones keep well at room temperature or in the refrigerator for 2 extra days. These scones can also be frozen and heated ahead of time. Enjoy!
🌿 No Bake Mint Slice 👌🏻
Perfect bank holiday treat 😉
💚 Ingredients
Biscuit Base:
• 400g of digestives
• 150g of unsalted butter (melted)
• 100g of condensed milk
• 2 tsp of cocoa powder
Mint Filling:
• 350g of icing sugar
• 2 tsp of peppermint extract
• Green food colouring (optional)
• 2-3 tbsp of water
Topping:
• 300g of dark chocolate
• A few after eight thin mints, broken up
🤍 Method:
• Line a 9x9" square tin with greaseproof paper and leave to the side.
• Blitz the biscuits in a food processor until they are a fine crumb – mix in the melted butter, cocoa powder, and condensed milk blitz again until combined.
• Press into the bottom of the tin and chill whilst you make the icing.
• Mix the icing sugar, peppermint extract, and food colouring and enough water till it forms a relatively thick paste – spread across the biscuit base. Leave to set for an hour.
• Melt the chocolate in a heatproof bowl and pour on top of the icing (trying not to disturb the icing too much) and leave to set in the fridge till solid, top off with extra after eight thins if desired at this stage.
• After a couple of hours, cut the mint slice into pieces and enjoy!

🍟 Tuscan Fries 🇮🇹
Influenced by the flavours of Tuscany I present to you oven baked Tuscan fries. 🤤 Very addictive. Sorry…!
👩🏻🍳 Ingredients:
4 large potatoes, cut into ¼-inch-thick chips
3-5 tablespoons of olive oil
3-4 sprigs fresh rosemary + 1 tsp of dried rosemary
A small bunch of sage leaves + 1 tsp dried sage
4-6 cloves of garlic, smashed
1/2 teaspoon of smoked paprika
A generous sprinkle of sea salt
2 tablespoons of unsalted butter
2 tablespoons grated pecorino
🍟 Method:
1. Preheat the oven to 200 degrees.
2. Place the potatoes on a large baking sheet and toss with olive oil, fresh rosemary, fresh sage, the dried herbs the smashed garlic cloves, the smoked paprika, and a large pinch of sea salt.
3. Spread the fries in an even layer. Do not overcrowd the pan, if needed, divide the fries between 2 baking sheets. Transfer to the oven and bake for 15-20 minutes, then flip and bake for 15 minutes more.
3. Add the butter and pecorino, toss, and return to the oven for another 5 minutes. You want the potatoes to be tender, yet crispy.
4. Serve while hot, sprinkled with some flaky sea salt and garnished with extra fresh herbs.

🍞 Bruschetta is one of my favourite dishes in the world to make and it can be fantastically delicious if you use high-quality ingredients. It's a perfect valentines starter, too! 💝
🤓 There are many different varieties of bruschetta in Italy depending on the region but the most well-known version of bruschetta is simply made with grilled slices of bread rubbed with raw garlic and topped with chopped tomatoes, fresh basil, and salt. Because there are only a few ingredients, each one is important. High-quality, fruity olive oil is best, and good rustic Tuscan/ sourdough or Italian bread makes a tasty base. Here I’m showcasing my top 4 flavours but you can really play around with the flavours and even add some added protein, too.

Who fancies a rich, thick, and delicious tomato sauce that takes less than 20 minutes to make? 🤗 Keep reading…
💚 Ingredients:
400g of fresh tomatoes
3 cloves of garlic, crushed
2 tablespoons of olive oil
1 tablespoon of extra virgin olive oil
1/2 teaspoon of ground turmeric
1 teaspoon of sea salt
1/2 teaspoon of Urfa chilli flakes
1 teaspoon of dried Italian herbs
1 tablespoon of tomato purée
A small handful of fresh basil and fresh oregano, for garnish
🇮🇹 Method:
1. Simply wash and boil your tomatoes in a deep pan of boiling water for 5 minutes until they’re fork tender. Drain the tomatoes and allow them to cool for a few minutes before peeling their skins off. They should come off very easily.
2. Dry off the same deep pan and drizzle in your olive oil. Add your garlic and tomatoes, crushing them gently with your wooden spoon, and cook over a low heat for 5 minutes.
3. After 5 minutes, your tomatoes should have broken down into a pulp like texture. Add in all your seasonings and taste the sauce at this stage. If it needs thickening, add in your tomato purée and if it’s too thick, add in a dash of water. Simmer with the lid on and cook for a further 5 minutes.
4. Finally, drizzle in your extra virgin olive oil to give your sauce a nice sheen and serve right away. My tomato sauce is perfect with bruschetta or as a pizza base, as a pasta sauce, with gnocchi…the options are truly endless!

💥 Turkish Islak Kek RECIPE 🇹🇷
If there’s one Turkish cake that stands out from all the rest, it just has to be this iconic islak kek, translated to the wet cake. It may not sound as good as it looks and tastes, but you must try this recipe for it epitomises Turkish sweet treats in general, sticky, moist, rich, and oh so tender
🤩 Ingredients:
200g of light brown sugar
250g of plain flour
3 medium eggs, at room temperature
200ml of unflavoured oil
200ml of milk/any milk of your choice
1sp of organic vanilla extract
4 tablespoons of dark cocoa powder
1 teaspoon of baking powder
Fresh strawberries/seasonal fruit, for decoration (optional)
For the chocolate sauce:
3 tablespoons of dark cocoa powder
A pinch of sea salt
100ml of unflavoured oil
150g of light brown sugar
150ml of double cream
200g of dark chocolate chips
💃🏻 Method:
1- Preheat your oven to 180°C and line your brownie tin with greaseproof paper, set aside. Next, in a large bowl, whisk together the eggs and sugar at high speed. This will take about 5 minutes. Add your oil, milk, and vanilla and whisk again for just another couple of minutes.
2- Next, add in all your dry ingredients and beat for a few more minutes until the ingredients are well incorporated. Pour into your baking dish and bake for 40 minutes or until a toothpick comes out clean once inserted into the centre of the cake.
3- Whilst the cake is baking, make the sauce by heating a small saucepan over medium-high heat and mixing in all of your ingredients apart from the chocolate chips with a whisk. Once the liquid has come to a simmering point, turn the heat off and add in your chocolate chips and whisk well. It should be nice and thick and glossy now, ready for your cake!
4- Once your cake is ready, slice it up while it’s still in the baking dish and pour over the warm sauce on the hot cake right away as this will absorb the sauce better. Serve after a minimum of 2 hours and garnish with fresh strawberries or seasonal fruits. Afiyet Olsun!

Spooky Cookies! 🍪 👁😵 Ingredients: 280g of plain flour/gf plain flour 1 teaspoon of bicarbonate of soda 1 and 1/2 teaspoons of cornflour 1/2 teaspoon of sea salt 170g of unsalted butter, melted 200g of light brown sugar 1 large egg + 1 egg yolk, at room temperature 2 teaspoons of organic vanilla extract @steenbergsltd 200g of chocolate chips A handful of edible eye decorations and Halloween sprinkles Method: 1. Whisk the flour, bicarb, cornflour, and sea salt together in a large bowl. Set aside. 2. In a medium bowl, whisk the melted butter and brown sugar together until no brown sugar lumps remain. Whisk in the egg and egg yolk. Finally, whisk in the organic vanilla extract. The mixture will be thin. Pour into dry ingredients and mix with a large spoon or rubber spatula. The dough will be very soft, thick, and appear greasy. Fold in the chocolate chips. The chocolate chips may not stick to the dough because of the melted butter but do your best to combine them. 3. Cover the dough tightly and chill in the refrigerator for at least 2–3 hours or up to 3 days. I highly recommend chilling the cookie dough overnight for less spreading! 4. Take the dough out of the refrigerator and allow it to slightly soften at room temperature for 10 minutes. 5. Preheat oven to 170°C and line large baking sheets with greaseproof paper, set aside. 6. Using a cookie scoop or tablespoon measure 3 scant of dough for medium cookies. Roll into a ball, making sure the shape is taller rather than wide—almost like a cylinder. This helps the cookies bake up thicker. Repeat with the remaining dough. Place 8–9 balls of dough onto each cookie sheet and bake the cookies for 12–13 minutes or until the edges are very lightly browned. Once the cookies are out of the oven wait a few minutes before you begin to decorate. 🍂 Apple And Vanilla Sheet Cake 🍎 Ingredients: 220g of plain flour 2 teaspoons of baking powder 3 medium eggs 220g of light brown sugar 170g of unsalted butter, melted 5 tablespoons of almond milk 1 teaspoon of organic vanilla extract @steenbergsltd 2 to 3 medium apples, peeled, cored, and sliced 1 & 1/2 tablespoons of demerara sugar A liberal dusting of icing sugar ❤️ Method: Preheat your oven to 180°C and line a baking tray with greaseproof paper, set aside. Sift and combine flour and baking powder in a medium-sized bowl, then set it aside. Using a larger bowl, beat eggs and sugar. Add the melted butter, milk, and vanilla extract and continue mixing. Combine the flour and baking powder, and mix until there are no lumps left in the apple cake batter. Pour the batter into the lined baking sheet and use an angled spatula to even the top. Prepare the topping by combining ground cinnamon with sugar. Arrange the fresh apple slices on top and sprinkle them evenly with the demerara sugar. Place your sheet cake into the lower part of the oven for 28 to 30 minutes or until a toothpick comes out clean when inserted into the cake. Set aside for a few minutes to cool. 🧄 Easy Garlic Confit Mayo 🤌🏻 Once you make this mayo, you'll never buy shop-bought again. Cheaper than tastier than store bought. Fact. 🍟 Ingredients: 10 garlic confit cloves 1/2 cup of garlic confit olive oil (I use my spicy garlic confit for this) 1/2 cup of olive/rapeseed oil 2 eggs 1 tbsp of lemon juice/vinegar A good pinch of traditional sea salt @steenbergsltd A good sprinkling of allepo chilli flakes, for garnishing A good pinch for perfect salt, for chip garnishing 😋 Method: Place all ingredients into a container or jug that is just wide enough to fit an immersion blender. Using an immersion blender, blend all ingredients together, being careful not to move the blender up and down. Once the ingredients begin to emulsify, move the blender up and down while slowly incorporating all of the oil. Continue until you have a thick consistency. Strawberry & Vanilla Crumble 🥄 Ingredients: A handful of strawberries, sliced 1 tablespoon of vanilla extract 150g of salted butter, from the fridge 100g of plain flour 80g of light brown sugar 1 - 2 tablespoons of demerara sugar Custard, to serve 😋 Method: 1. Divide your sliced strawberries evenly between 3-4 ramekins and distribute the vanilla extract between the portions. 2. Next, in a large bowl add your flour and sugar and mix well with a fork. 3. Add in your butter and rub into the flour mixture until course breadcrumbs appear. Top your strawberries with the crumble mixture and a sprinkling or demerara sugar. 4. 🫶🏻 Chocolate Olive Oil Cake 🫒 So delicious, so tender, so moist, AND SO easy! 🍫 Ingredients: For The Chocolate Olive Oil Cake 160g of plain flour/gf plain flour ½ teaspoon of bicarbonate of soda 1 teaspoon of sea salt 100ml of water 40g of cocoa powder 3 large eggs 180ml of olive oil 2 teaspoons of vanilla extract 150g of organic cane sugar Fresh berries, to serve (optional) 100g of dark chocolate, melted ✨️ Method: Preheat the oven and prepare the cake pan: Preheat the oven to 325°F. Brush a cake pan with olive oil and line the bottom with greaseproof paper, set aside. Sift your flour, baking soda and salt: In a large bowl, sift together flour, bicarb and sea salt. In a small pot, add ½ cup + 2 tablespoons of water and bring to a simmer. Remove pot from heat. Whisk in the cocoa powder until smooth. Beat eggs, oil, vanilla extract and sugar: In a stand mixer fitted with the paddle attachment, or with a hand mixer, beat together eggs, olive oil, extracts and sugar on medium-high speed until pale yellow and ribbon-y, about 4 minutes. Add your cocoa powder mixture to egg mixture and beat on medium-low speed until just incorporated, stopping to scrape down the sides and the bottom of the bowl. Add flour mixture and mix until just incorporated. Bake: Pour cake batter into the prepared pan and place on the middle rack of the oven. Bake for 35-40 minutes. The cake is done when a tester inserted in the center comes away with only a few damp crumbs clinging to it. Allow the cake to cool for at least 1 hour on a wire rack before serving. 💚 Easy Wild Garlic Pesto 🥄 Ingredients: 100g of wild garlic 50g of Parmesan, grated 50g of pine nuts, skinned and toasted olive oil Fresh lemon juice, to taste Sea salt and cracked black pepper @steenbergsltd 🌿 Method: Thoroughly wash your wild garlic and place in a food processor, blitz, until fairly well broken up. Next, add your Parmesan and process further. This will help to break down the garlic leaves. Finally, add your pine nuts. When the nuts are added, you will want to have your olive oil to hand; turn the machine back on, and add olive oil to your desired consistency. Add salt, pepper, and lemon juice to taste. 💥 Spaghetti Aglio E Olio with NOOCH pangritata 🍝 Toss golden garlic and silky olive oil through spaghetti to make this classic Italian dish – ready in the time it takes to boil the pasta. 🤩 It's simple, flavourful, and perfect for busy days. 👩🏻🍳 Ingredients: · 300g spaghetti/tubular pasta/linguine · 4-5 tbsp extra virgin olive oil · 4 garlic cloves, finely chopped · 1- 2 tsp of red chilli flakes/ Aleppo chilli flakes · 2 tsp of sea salt · A small handful of parsley, finely chopped, plus extra for garnish For the pangritata: · A handful of sourdough breadcrumbs · 2 tbsps of olive oil · A pinch of sea salt · A pinch of turmeric · A pinch of red chilli flakes/ Aleppo chilli flakes · 1-2 tbsps of Engevita Protein & Fibre Yeast Flakes Unfortified 😋 Method: 1. Start off by making your pangritata first by heating a large pan with 2 tablespoons of olive oil over medium heat. Add in your breadcrumbs, seasonings, and toast for a couple of minutes. Turn the heat off and allow to cool completely before adding your nooch to the mixture and set aside. 2. Next, bring a large pan of well-salted water to the boil and cook your chosen pasta for about 10 mins, or until al dente, the pasta should not be cooked all the way. 3. When the pasta is nearly ready, heat the oil in a large frying pan set over medium heat and sizzle the garlic and chilli for 1 minute until fragrant and the garlic is lightly golden but not brown. Add a quarter of the parsley at this stage. 4. Drain your pasta and add it to the garlicky oil with the remaining parsley. Season and toss to combine, then serve with a generous lashing of your pangritata and more freshly chopped parsley. 😍 Miso Caramel NOOCH Cupcakes 🧁 #ad Go on, spoil your loved ones tomorrow, we know you want to! 😉 💜 Ingredients: For The Cupcake Sponge: 125 of unsalted butter/vegan butter 60g of light brown sugar 75g of caster sugar 125g of self-raising flour/gf flour 1/4 tsp of bicarbonate of soda 1/4 tsp of vanilla extract 2 large eggs/flax egg 1.5 tbsp of almond milk A pinch of sea salt For The Miso Caramel Nooch Sauce (make 24 hours beforehand): 150ml of water 250g of caster sugar 250ml of double cream/soya double cream 2 tbsps of Engevita Organic Yeast Flakes ¾ tsp of miso paste A small pinch of sea salt For The Salted Caramel Nooch Buttercream: 200g of unsalted butter, very soft 320g of icing sugar, sifted 1/4 batch of the Miso Caramel Nooch Sauce 🧡 Method: 1. Put your sugar and water into a tall and medium saucepan and turn the heat to a medium setting, do not stir this mixture at all. 2. After 5 mins it'll begin to bubble & after a further 4-5 minutes it will caramelise. Turn off the heat & slowly pour the cream, do this a little at a time, it will bubble a lot, keep stirring until all the cream has been added. Leave to cool for a few mins before whisking in your miso paste, sea salt & Engevita Organic Yeast Flakes. Pour into glass jars & leave out until completely cooled & ready for the fridge. 3. Next, preheat your oven to 170° & line your cupcake tin with either paper cases, set aside. 4. In a medium bowl add all of your cupcake sponge ingredients & get mixing, simple! Using an ice cream scoop, measure out even quantities of your batter and pour them into your cupcake cases. Bake for 18-20 minutes & set on a wire rack to cool down completely. 5. In a large bowl, beat the butter for a 5 mins until it’s pale a& fluffy. Add your icing sugar in batches of 3 & beat for at least 5 minutes after each addition. 6. Finally, add your salted caramel

Chocolate-Orange Mud Cake 🍊 The PERFECT Cake For Christmas! Ingredients: 200g butter softened 200g of light brown sugar 4 eggs 2 tsp of organic orange extract @steenbergsltd 180g of gluten-free self-raising flour 25g of cocoa powder 1/4 tsp of baking powder 1/4 tsp of xanthan gum 300g of icing sugar, sifted 150g of butter softened 100g of dark chocolate melted 1 tsp of orange extract Terry's chocolate orange segments, for decoration A small handful of decorations, optional Method: Preheat your oven to 180C and prepare a brownie tin with greaseproof paper, set aside. Cream together your softened butter and sugar using an electric hand whisk. Do so until lighter in colour and fluffier in texture. Gradually add your eggs and mix in alongside your orange extract. Sift your gluten-free flour, cocoa, baking powder, and xanthan gum, and then mix with your electric hand whisk until combined. Spoon your mixture into your prepared loaf tin and place in the preheated oven for 50 minutes. After 50 minutes, remove from the oven and put to one side on a cooling rack whilst you make the buttercream. Whilst your cake cools you can make the chocolate orange buttercream. Place your butter in a stand mixer (or electric hand whisk if you don't have a stand mixer), and mix on its own on high speed for about 5 minutes. The butter should change from a more yellow colour to being a lot more pale. Melt your dark chocolate, and put to one side to cool whilst making the rest of the buttercream. Add your icing sugar gradually to the butter, I mix each addition of icing sugar for around 3-5 minutes before adding the second half. Now add in your melted dark chocolate and orange extract and mix briefly to combine. It should be the right consistency at this point. Brunch Tomorrow Anyone? 🍳 Sweetcorn, feta and spring onion pancakes 🥞😋 Ingredients: 250g of sweetcorn + 70g of creamed/blitzed sweetcorn 3 spring onions, sliced 120g of feta, chopped 1 tablespoon of coriander, chopped 2 eggs 100ml of almond or regular milk 50g of gf/plain flour 60g 1 tsp of baking powder 1 tsp of sea salt and a pinch of black pepper 1 tsp of smoked paprika and chilli 1 tsp of urfa chilli flakes 1-2 fried eggs, for garnish, optional Olive oil, for frying Method: 1. Mix the corn and creamed corn, spring onions, feta, coriander, eggs, milk, flour, baking powder and spices in a bowl and season with salt and pepper. 2. Heat a large frying pan over a medium heat with a splash of oil and spoon heaped tbsps of mixture into the pan. Fry in batches for 2-3 minutes on each side until golden brown. Keep warm in a low oven while you cook the rest of the pancakes. Serve with a runny fried egg, if desired, 3. Enjoy! #nikibakesuk
