While debate rages on over whether lasagne is from Naples or Emilia-Romagna, most versions outside Italy are a bastardised version of the two.

This lasagne recipe veers closer to the Neapolitan style, featuring slow-cooked beef, pork and veal ragù heavy on the tomatoes, eschewing bechamel in favour of ricotta and low-moisture mozzarella (or caciocavallo if you can find it). Making good lasagne is a real labour of love, but the results make it worth every second of your time!

Perhaps the most internationally misunderstood Italian dish, ragù alla Bolognese does have some similarities to spaghetti Bolognese, but it’s by no means the same thing. Instead of being bolstered with tomatoes and other rogue ingredients (can you believe some people put mushrooms or other raw vegetables in their spag bol?), this ragù is loaded with three different minced meats, white wine, beef stock and just a splash of milk, cooked for at least 3 hours and served with tagliatelle 🍝
