Loads of chef juice happening this Saturday, come down and see me & at 12:00-15:00

☀️Vietnamese summer rolls☀️

It’s all about the dipping sauce for these, the rolls are incredibly fresh and clean tasting and needs that sweet and sour sauce to bring them alive!

Ingredients...

Dipping sauce:
Red chilli
Green chilli
Garlic
Ginger
Lime juice
Fish sauce
Rice wine vinegar
Sugar

Rolls:
Rice paper
Avocado
Cucumber
Spring onion
Vermicelli noodles
Basil
Coriander
Mint
Radishes

Method..

Dipping sauce:
1. Finely chop garlic/chillis/ginger and add to a pan, add a splash of rapeseed oil, fish sauce, freshly squeezed lime, sugar and rice wine vinegar. Bring this to a warm simmer for 15 mins.

Rolls:
1. Chop all your fresh ingredients and leave a side.
2. Cook your vermicelli noodles and cool down with cold water.
3. Soak your rice paper in warm water for 5/10 seconds (you want it to be soft and not paper like).
4. Put your rice paper on a board and add all your fillings, fold over and tuck the corners in like a burrito.

Serve the rolls on a plate with the warm dipping sauce, enjoyyyy.

Really enjoyed making these as much as I did eating them! I’ve got a few tweaks to make in the recipe but il be filming the next time I make them so you can give them a go! Just deciding what filling to put in them 🤔

Simple mushroom risotto perfect for a quick midweek dinner!

Risotto:
Shallots
Garlic
Thyme
Chestnut mushrooms
Rapeseed oil
Butter
Arborio rice
Parmesan

Mushroom stock:
Onions
Spring onions
Carrots
Thyme
Garlic
Dried porcini mushrooms
Celery
Add water to this and cook for 4-8 hours, strain and it’s good to go!
