Are you a tuna Niçoise fan?
If you're looking for a quick and easy lunchtime idea, then this high-protein bagel will keep you fuelled all afternoon. Let us know if you'll be trying it in the comments!
Recipe:
Tuna Niçoise bagel
SERVES 2
PREP 5 mins
COOK 15 mins
EASY
1 egg, at room temperature
3 tbsp cream cheese
½ tbsp Dijon mustard
4 Romaine lettuce leaves
1 x 92g can tuna in olive oil
1 lemon, juiced
30g sundried tomatoes
25g black olives
50g green beans
½ small red onion, sliced
2 basil sprigs, leaves picked
2 bagels, sliced and toasted
1 Bring a small pan of water to a boil and carefully add the egg. Cook the egg for 8 mins then drain thoroughly and peel. Set aside. Add the green beans to the same pan and cover with boiling water and salt well. Bring to a boil and simmer for 3 mins until tender with a bite. Drain and keep in cold water until needed.
2 Add the cream cheese to a chopping board along with the egg, green beans, mustard, lettuce, tuna and its oil, lemon juice, tomatoes, olives, onion and basil leaves. Run a knife over it until everything is well chopped together. Season with some salt and pepper and spread over the two toasted bagels and serve.
