Try making these crispy stuffed portobello mushrooms, filled with Paxo Sage & Onion Stuffing, onion, garlic and emmental cheese. They also work just as well as a seasonal side, or even a party nibble – if you size down the mushrooms. Give them a go and let us know what you think!
Paxo-stuffed garlic mushrooms
MAKES 6
PREP 10 mins
COOK 30 mins
6 large portobello mushrooms, stems removed and chopped
olive oil
30g butter
1 onion, chopped
2 cloves garlic, crushed
6 tbsp Paxo Sage & Onion Stuffing Mix
50g emmental, finely grated
1 Heat the oven to 180C/160C fan/gas 4. Place the mushrooms on a baking tray, top side down. Brush with oil and season, then roast for 10 mins.
2 Meanwhile, melt the butter in a frying pan, then fry the onion until softened. Add the garlic and cook for 1 min, then mix in the mushroom stems and cook until softened, before leaving to cool.
3 Once cooled, stir in the Paxo stuffing mix and most of the emmental, along with any mushroom juices. Scoop the stuffing mixture onto the mushrooms and sprinkle over the remaining emmental, then return to the oven for 15-20 mins until cooked through and the topping is crisp and golden.

Are you having turkey this Christmas?

Dry-brined turkey
SERVES 8-10
PREP 20 mins
COOK 4 ½ hrs

5.5kg turkey
Bunch of herbs, we used rosemary, parsley and thyme
250g unsalted butter
1 tbsp treacle
For the brine
12 tsp salt
2 tsp garlic powder, optional
2 tsp onion powder, optional
2 tsp MSG, optional
1. Pat the turkey dry all over with kitchen paper and remove any giblets and set aside for gravy. Put the turkey onto a wire rack set above a roasting tin.
2. In a small bowl, combine the salt with the optional extras if using. You can bash them together in a mortar and pestle, to make sure everything is fine ground. Cover the turkey all over with the mixture, including inside the cavity, rubbing it in well, ensuring you lift all the joints and get into every crevice, including under the breast skin. Once the bird is sufficiently
covered, all over, you can discard any remaining salt. Put the bunch of herbs in the cavity. Set aside, uncovered, in the fridge for up to 2 days, or at least 24 hrs.
3. When ready to cook, heat the oven to 150C/130C fan/gas 2. Pour enough water into the base of the roasting tin so that the base is completely covered. Melt 150g of the butter over a low heat then remove from the heat. Add a clean, new j cloth to the pan and toss to coat and absorb the butter. Arrange the j cloth neatly and evenly over the top of the turkey then roast in the oven for about 4 hrs, basting every 30 mins to an hour, or until a temperature probe inserted into the thickest part reads 70C.
4. Melt the remaining butter with the treacle, this is just a glaze to give the turkey a shiny brown coating. Brush over the cooked turkey and increase the oven temperature to 220C/200C fan/gas 7. Cook for 15-25 mins, brushing with a little mor

Brie & cranberry wheels
Makes 8
PREP 20 mins + chilling
COOK 20 mins

150g strong white flour
150g cold butter, grated
200g brie, sliced
6 tsp cranberry sauce
4 tsp black sesame seeds
A few pinches of chilli flakes
1 egg, beaten to glaze
1. Rub the butter into the flour to make breadcrumbs, then add 3-4 tbsp
cold water and bring together with a cutlery knife. Knead briefly on the
work surface, then roll and fold a few times to build up the flaky layers.
Wrap and chill for 30 mins.
2. Roll the pastry out on a floured work surface, and top with the cheese,
small spoons of cranberry, sprinkle over the chilli and sesame. Roll up into
a log, trim the ends and cut into 8 pieces. Chill for 30 mins.
3. Brush the wheels with beaten egg all over, then bake in the air fryer at
180C for 20-25 mins until golden and puffed. The cheese will leak some oil
into the air fryer, so line with baking paper or a reusable liner if you need
to.
