What’s your favourite dip? Zaalouk from Morocco is hard to beat for me 🔥
During the summer, when tomatoes + aubergines come into season + taste at their best, this is a delicious dip/salad to make 🌞
Done in one pot, with just a handful of standard storecupboard ingredients, I’ve left MY full recipe below. Enjoy, and let me know if you give it a go!
INGREDIENTS (serves 4)
400g large tomatoes
1 large aubergine
4 garlic cloves
1 tbsp smoked paprika
1 tbsp cumin
15g fresh parsley
15g fresh coriander
100ml water
Salt
Pepper
Olive Oil
TO SERVE: 1 lemon, handful of pommegranate seeds, flatbreads.
METHOD
1. Prepare you tomatoes by peeling them (score then blanch in boiling water, place in an ice bath, then peel with ease!). Then chop into small pieces.
2. Prepare your aubergine by peeling, then slicing into small pieces.
3. In a saucepan, get a good glug of olive oil warmed.
Add the cumin + smoked paprika, allowing to infuse the oil + toast for 1 minute.
4. Add the minced garlic, fry for another minute, then add the tomatoes, aubergine + a handful of chopped coriander + parsley.
5. Add a splash of water + tomato puree if you like, then leave to simmer on a medium low heat until thickened (30 minutes), stirring occasionally.
6. Season to taste with salt + pepper, then you can mash slightly to break it down.
7. To serve, spoon into a bowl, then top how you wish - I went with olive oil, more parsley, pommegranate seeds + lemon slices.
8. Serve with toasted flatbreads + enjoy!
