Ingredients ๐๐พ
๐๐พ Chips
- 400g potatoes or 300g oven chips
- 2 tbsp olive oil
- 1/2 tsp Chinese five spice
๐๐พ Everything Else
- 1 tbsp cooking oil
- 1 white onion, sliced
- 1 red chilli, sliced
- 1 green chilli, sliced
- 1/2 rep pepper, sliced
- 1/2 green pepper, sliced
- 2 tsp Chinese five spice blend
- 1 tsp salt
- 1 tsp white pepper
- 1 spring onions, sliced
Method & Tips ๐๐พ
- Allow the chips to soak in cold water for 30 minutes to remove starch and dry with a paper towel before seasoning the chips.
- Cook chips in the air fryer for 12-15 mins at 180c, toss midway through and cook for longer for extra crispness.
- Allow the onion and chillis to saute for a few minutes until the onion starts to brown.
- Add in your red and green peppers and cook for a further minute.
- Add in your Chinese five spice blend, salt and white pepper. Stir well, and allow to cook for a further minute.
- Finally add the cooked chips and chopped spring onions and allow the flavours to infuse.

- 2 garlic cloves, crushed
- 4-5 spring onions
- 1 scotch bonnet pepper

- 380g rice, washed and pre soaked in water
- 1 cup water, or until the rice is submerged by an inch
๐๐พ Jamaican Chicken Curry - Part 2
- 3 tbsp cooking oil
- 1 large carrot, chopped
- 1 medium potatoe, chopped
- 1 scotch bonnet pepper
- 1 tsp thyme
- Water (pour in until the chicken is submerged)

Method & Tips ๐๐พ
- Allow the chicken to marinade in the fridge for 1 hour before cooking.
- Cook the chicken on medium heat for 25-30 minutes
- With the rice, bring the rice to boil for 5 minutes on high heat once you've added all the spices. Once the rice is in the pot, ensure there is enough water to cover the rice by an inch and cook for 12-15 minutes on medium/low heat or until the water has been absorbed.
- Placing a foil before the lid when cooking the rice will allow the rice to steam and stay fluffy.

- Cook the chorizo in a pan for 5 minutes, flip occasionally, no oil is required, allow the chorizo to dry on paper towel once cooked
- Elbow macaroni will take around 8 minutes to cook, remember that we're baking the Mac and Cheese in the oven so it can be a little firm after 8 minutes which is perfectly fine.
- When adding the cheese into the pot, allow the cheese to fully melt to create a nice thick sauce, add a splash of milk of required. Why not experiment with different types of cheese?
- Bake the Mac and Cheese for 30 minutes until the top has browned and the cheese is bubbling.
