What I like to call - The Cheesy Faji-Taco.
Chicken Fajita in taco form, toooed with cheese and then thrown under the broiler.
Olive oil
1.5 lbs chicken breast, sliced thin into fajita style pieces
Your favorite taco seasoning blend
1 medium onion, sliced
1 red pepper, sliced
2 Garlic cloves, minced
Tortillas
Mexican cheese blend
Spicy Crema:
1/3 cup sour cream
2 tbs mayo
1 tbs taco seasoning
Juice of half a lime
1 tbs hot sauce
Mix all ingredients for Crema in a bowl and set aside. Season chicken with taco blend and a tbs of olive oil and mix to evenly coat. Set aside. Prep your onions and peppers and sauté in a pan with some oil until softened. Add garlic in the last 2 min of cooking. Transfer cooked veggies to a separate dish. Add more oil to the same pan and cook chicken. Cook in batches if needed. Ensure browned on all sides (about 3-5 min per side depending on thickness of chicken. Once done, transfer peppers and onions back to the pan with the chicken and mix to cook for a couple more minutes. Assemble tortillas on a high walled baking dish and fill with your fajita mix. Too with shredded cheese. Place in the broiler on high for a couple minutes or until cheese is melted. Remove from the oven and top with your Crema.

Fillings (double for more)
1.5 cups walnuts, chopped + 1/4 cup sugar + 1 tsp rose water and orange blossom water.
1.5 cups Spanish cheese, crumbled and squeezed of excess moisture.
Sugar Syrup:
1 cup water. 2 cups sugar
1 teaspoon lemon juice
1 teaspoon each rose, blossom water
Boil water and sugar over medium heat for 3 minutes, lower heat add in lemon juice, boil for 2 minutes, turn off heat add in the rose and blossom water, set aside to cool.
Atayif Batter (double for more)
2 cups flour
2 cups warm water
2 tablespoons sugar
1 teaspoon yeast
1 teaspoon baking powder
Put all ingredients together in a blender or a hand mixer except for the baking powder and blend until mixture is smooth. Cover and let rest for 30 minutes. Add baking powder and mix well. Heat up a non stick pan over medium heat, pour or scoop about 1/4 cup or enough to make them about 4-5in circles into the pan. When bottom is a light golden color, remove with a spatula and cool on kitchen towel. Fill in a teaspoon of your walnut or cheese stuffing., Pinch both ends together to form half moon. Fry in vegetable oil until crispy (about 1 min per side), remove from oil and drizzle with syrup right away to allow the dough to absorb the delicious sweetness.

Parmesan Roasted Brussel Sprouts. You’ll fall in love with this recipe even if you don’t normally like Brussel sprouts. Perfect side for thanksgiving dinner and will sure please the crowd!
Brussel sprouts, stems cut and halved
4 tbs butter, melted
3 tbs olive oil
1 garlic clove, minced
2-3 tbs grated or shredded Parmesan plus more for coating
Salt and pepper
Preheat oven to 375F. Cut your Brussel sprouts and place in a bowl. In a separate bowl, mix melted butter with oil, garlic, cheese, salt and pepper. Pour over your Brussel sprouts and toss to evenly coat. Add 1/3 cup of Parmesan in a separate bowl and coat the flat end of the sprouts in the Parmesan cheese. Lay on a baking sheet lined with parchment paper flat side down and bake for about 20-25 min or until cooked through and cheese has crisped.

ter up your bird and don’t be stingy with this roasted garlic and herb buttered Turkey.
10 lbs turkey, butterflied
2 sticks of salted butter, softened
1 head of garlic
1-2 tbs olive oil
Paprika, salt, black pepper, onion and garlic powder
Fresh Rosemary, sage and thyme
Cut the top off of your garlic (about 1/2 in from the top). Place on a sheet of aluminum foil and coat with olive oil ensuring oil gets in between the cloves. Wrap it tightly and place on a baking tray and bake at 400F for 35 min. Allow to cool when done. Soften butter by leaving it at room temp. Add chopped herbs and squeeze out the roasted garlic onto your butter. Mix well with your hand. Separate the skin from the meat of you turkey and rub dollops of butter under the skin of the breasts and leg/thighs. Rub the butter all over the top of the turkey as well. Lay on a roasting pan over some onions, carrots and potatoes. Bake at 400F for 1.5 hours basting it with the butter drippings every 20 min. Cover with foil during the last 30 min of cooking. Remove the foil and turn on the broiled to high. Cook the top to get a crispy skin for about 5-10 min. Remove from the oven and allow to rest for 30 more minutes. At this time the internal temp would have reached 165F and would have retained all of its juices just before carving. Serve with your favorite sides.

1 avocado
1 can of chickpeas, drained and rinsed
3 tbs lemon juice
2 tbs tahini
1 garlic clove
Salt and pepper
1/4 cup water
Parsley, olive oil and zaatar for garnish
Put everything in a food processor except the water and garnishes. Blend until well combined. Scrape the sides if needed. Run it again and slowly add water until it gets nice and creamy. Taste test and adjust to your liking. Garnish with extra chickpeas, parsley, zaatar and olive oil and serve with your favorite bread.

Olive oil
Labne or Greek yogurt
Fried eggs
1 garlic clove, chopped
1/2 tsp red pepper flakes
Salt and pepper
Parsley
Pita bread for serving
Poach or fry your eggs, I prefer frying so you can use the oil leftover for when you cook your garlic and pepper. Spread your yogurt or Labne on a plate and top it with your eggs. Use the drippings to fry your garlic and pepper and pour it on top of the eggs. Season with salt and pepper and garnish with parsley. Serve with pita bread.

It works. Shredding boiled eggs works perfect for when you want to make an egg salad sandwich. I always hated chipping up the boiled eggs with a knife and I don’t need to add any more gadgets in my kitchen so I just took out the good ol cheese grater.
Boiled eggs
Ripe avocado
Salt and pepper
I also used @zestyz everything zaatar seasoning
Olive oil
Fresh herbs, I used basil
Toast.
Grate the eggs in cheese grater. Add avocado and seasoning and mix. Put it on your favorite piece of toast and top with olive oil and fresh herbs.

PB&J Oatmeal Bars with Strawberry Chia Seed Jam

The perfect breakfast or snack for you and the baby!
What you need:
8 x 8 baking dish, or sinus or size.
2 ripe bananas
2 heaping tablespoons of smooth peanut butter
1 cup of rolled oats
1/4 cup of milk.
Homemade strawberry jam:
3/4 -1 cup strawberries (fresh or frozen)
1/4 cup water
1 tbs chia seeds
Make the jam by throwing everything in a small pot and bringing it to a boil then lower to a simmer. Mix frequently until the strawberries have softened and the sauce thickens. You can mash it up with a fork if needed. Allow to cool.
Preheat oven to 350F. In your baking dish, mash the banana then add your peanut butter and mix. Add oats and milk and mix until smooth. Spread it evenly across the pan and pour your homemade jam on top. Put it in the oven for 30 min or until edges begin to brown. Remove from the oven and allow to cool before serving or refrigerate to enjoy the next morning.

2 ingredient no bake cookies. A delicious and easy mid-day snack for you and the baby!
1/2 cup pitted dates
1/2 cup peanut butter
Remove pits from dates. Of they are very dry, rehydrate in some warm water for 5-10 min. Otherwise you can skip this step. Add the dates with peanut butter to a food processor and run until well combined. Form into cookie and enjoy right away or allow them to sit in the fridge for an hour or so.

Spinach Ricotta Stuffed Shells.
1 package of jumbo shells
1 tbs olive oil
3 garlic cloves, minced
10oz fresh spinach, chopped
1 cup shredded mozzarella
16oz ricotta
1 egg
1/4 cup fresh basil, chopped
Pinch of red pepper flakes
Salt and pepper
1 jar of pasta sauce
Shredded Parmesan
Boil noodles according to package. Allow to cool. In a large sauté pan, add oil over medium high heat. Add garlic and spinach. Mix until wilted. Transfer to a bowl. Cool 5 min. Add remaining ingredients and mix to combine. In a large baking dish, spread pasta sauce. Fill each noodle shell with ricotta mixture. Lay in rows over the sauce. Cover with foil and bake at 350F for 20 min. Garnish with grated Parmesan.

Mushroom Soup. As easy as a snap of the finger. The sounds of the kitchen are music to my ears.
3 tbs butter
3-4 garlic cloves, minced
3 small onions or 2 medium, diced
16oz mushrooms, diced
1/4 cup flour
4 cups vegetable broth
3 sprigs of thyme
Salt and pepper
1 cup canned coconut milk or heavy cream
In a pot, melt butter. Add garlic and onions. Sauté for 3 min. Add mushrooms and sauté for 5 min. Add flour and mix. Add broth and thyme sprigs and bring to a simmer. 15 min. Add coconut milk or cream. Stir and bring to a simmer for 5 more minutes. Season with salt and pepper. Remove thyme sprigs. Use an immersion blender or a standing blender to blend to your liking. Serve with croutons.

Slow Cooker Chicken Chili all done in the instant pot.
(Pressure cooking method also below)
1.5 lbs chicken breast
1 bell pepper, diced
1 medium onion, diced
6 garlic cloves, minced
Jalapeño, diced (optional)
1 can red kidney beans or any beans of your choosing, drained and rinsed
Seasonings if your liking. I used: paprika, garlic and onion powder, cumin, oregano, chili powder salt and pepper
2-3 cups chicken or vegetable broth
1 can full fat coconut milk, or 1.5 cups milk
1 can or 1 cup of drained corn
1 lime, juiced
Garnishes:
Avocado
Jalapeño
Cilantro
Cheese
Tortilla chips
In a slow cooker (I used my instant pot) add first 8 ingredients and mix. Set slow cooker to 6 hours on low or 3 hours on high. When done, remove chicken and shred. Transfer back to the pot and add milk, corn and lime. Set instant pot to sauté for 10 min or slow cook on high for an additional 10-20 min. Adjust taste to your liking. Serve hot with your favorite garnishes.
Attentively, you can pressure cook by adding chicken, seasoning and broth to the pot and pressure cook for 10 min allowing the pressure to release naturally. Remove chicken to shred. Then add chicken and all remaining ingredients back to the pot for 3 min of pressure cooking allowing the pressure to release naturally. Serve with garnishes.
