Recipe
450g Bread flour or All purpose flour
3 Eggs
100g Milk
40g Sugar
10g Salt
150g Sourdough starter
114g softened butter
Explore the refreshing taste of ginger beer. Perfect for any occasion!
Ginger Bud:
Day 1 : In a jar mix together:
200ml of filtered water
1Tbsp ginger cut into cibes and with the skin
1Tbsp sugar
Day 2 to 5 each day add:
1Tbasp ginger cubes with skin
1Tbsp sugar
Ginger sirop:
1L filtered water
70g sugar
5 calamansi
40g ginger, cubes
1 thumbsize of grind ginger
Heat for 10 to 15 mins
Let it cool
Add 50ml of ginger bud
Transfer to airtight bottle
Let it sit at room temperarure for 2 days
Don't forget to open you bottle 2 to 3 time a day
After 2 days, transfer in the fridge for at least 4 hours
Enjoy your ginger beer.

Day 1 Sour Dough Starter
25g All-purpose flour
25g Whole wheat floud
50g Warm water

Get ready to satisfy your sweet tooth with this delightful DIY Tartelette Recipe! Whether you're hosting a dinner party or just want to treat yourself, these charming tartelettes are sure to impress!
Achieve the perfect texture and flavor, ensuring your mini pies are a hit every time.
Homemade crust:
250g Flour
125g Butter at room temperature
1 Egg yolk
50ml Water
A pinch of salt
In a bowl, mix flour and salt.
Put the butter and knead the dough with your fingertips, pass the flour between your hands and rub.
Make a well then add the water and egg yolk.
Mix to incorporate the flour and form a ball.
Leave to rest for 30 mins in the fridge.
Creme patissiere:
500g Milk
Vanila flavor
3 Eggs yolk
80g Sugar
20g Flout
20g Cornstarch
Pour the milk into a saucepan with a teaspoon of vanilla flavoring.
In a salad bowl, whisk the egg yolks and 60g of sugar, pour the remaining 20g of sugar into the milk.
Add the flour and cornstarch to the egg mixture and mix with a whisk.
Before the milk gets too hot, pour a small portion of the mixture into the saucepan and whisk.
As soon as the milk reaches a boil, turn off the heat and pour the mixture into the saucepan while stirring so that the eggs do not cook too quickly.
Continue to mix until the cream thickens.
Place in a salad bowl and cover with film, then place in the fridge for at least 2 hours.
Preheat your oven at 180 degrees Celsius.
Remove your crust from the fridge and shape our mini pie.
Bake ythe crust for 20 mins and let then cool down.
Once your crust and your creme patissiere are cool fill your mini pie with creme patissiere and your favorite fruits.
