Hearty Veggie Rolls with Peanut Sauce

Ingredients:

8 rice paper wrappers
½ cup shredded red cabbage
1 carrot, julienned
1 cucumber, julienned
½ avocado, sliced
Fresh mint and cilantro leaves
¼ cup peanut butter
2 tbsp soy sauce
1 tbsp lime juice
1 tsp maple syrup
Directions:

Prepare the Ingredients:

Wash and prep all the vegetables. Shred the red cabbage, julienne the carrot and cucumber, and slice the avocado.
Arrange everything on a plate for easy assembly.
Prepare the Rice Paper Wrappers:

Fill a large shallow dish with warm water.
Dip one rice paper wrapper into the water for about 10 seconds until it becomes soft and pliable.
Carefully lay it flat on a clean, dry surface.
Assemble the Rolls:

Place a small portion of red cabbage, carrot, cucumber, avocado, mint, and cilantro in the center of the wrapper.
Fold in the sides, then roll tightly from the bottom up, like a burrito.
Repeat the process with the remaining wrappers and filling.
Make the Peanut Dipping Sauce:

In a small bowl, whisk together peanut butter, soy sauce, lime juice, and maple syrup until smooth.
Add a little water if needed to reach the desired consistency.
Serve:

Arrange the veggie rolls on a plate and serve with the peanut dipping sauce on the side.

Rocky Road Chocolate Fudge Cookies 🍫🌰🍪

Ingredients:

1 1/2 cups all-purpose flour 🌾
1/2 cup unsweetened cocoa powder 🍫
1/2 teaspoon baking soda 🍶
1/4 teaspoon salt 🧂
1 cup unsalted butter, softened 🧈
1 cup granulated sugar 🍬
1/2 cup brown sugar, packed 🍂
2 large eggs 🥚
1 teaspoon vanilla extract 🍦
1 cup semi-sweet chocolate chips 🍫
1/2 cup chopped walnuts or pecans 🌰
1 1/2 cups mini marshmallows 🍡

Instructions:

Prepare the Cookie Dough:

Preheat your oven to 350°F (175°C). 🔥
In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt. 🌾🍫🍶
In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. 🧈🍬🍂
Beat in the eggs one at a time, followed by the vanilla extract. 🥚🍦
Gradually add the dry ingredients to the wet ingredients, mixing until well combined. 🍪
Add the Rocky Road Ingredients:

Stir in the semi-sweet chocolate chips, chopped nuts (walnuts or pecans), and mini marshmallows until evenly distributed. 🍫🌰🍡
Form the Cookies:

Drop rounded tablespoonfuls of dough onto ungreased baking sheets, spacing them about 2 inches apart. 🍪
Gently press the tops of the cookies to flatten slightly.
Bake the Cookies:

Bake in the preheated oven for 10-12 minutes, or until the edges are set but the centers are still soft. 🕒
Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely. ❄️

Ingredients:

1 1/2 cups graham cracker crumbs
1/4 cup granulated sugar
1/2 cup unsalted butter, melted
1 1/2 cups heavy cream
8 oz cream cheese, softened
1/2 cup powdered sugar
1/2 cup fresh orange juice
1 tablespoon orange zest
1 teaspoon vanilla extract
1 tablespoon gelatin (optional, for extra firmness)
1/4 cup water (if using gelatin)

Directions:

In a medium bowl, combine graham cracker crumbs, sugar, and melted butter. Press this mixture into the base of a springform pan or pie dish. Chill in the fridge while you prepare the filling.
In a small bowl, dissolve the gelatin in 1/4 cup water (if using) and let it sit for 5 minutes. Microwave for 10 seconds to dissolve completely. Set aside.
In a large mixing bowl, beat the cream cheese and powdered sugar until smooth and creamy.
Add the fresh orange juice, orange zest, and vanilla extract to the cream cheese mixture. Mix until well combined.

Carrot Cheesecake Bars
Ingredients:

Crust: 1 1/2 cups graham cracker crumbs, 1/4 cup granulated sugar, 1/2 cup unsalted butter, melted.

Filling: 16 oz cream cheese, softened, 3/4 cup granulated sugar, 2 large eggs, 1/2 cup sour cream, 1 teaspoon vanilla extract, 1 cup finely grated carrots, 1/2 teaspoon ground cinnamon, 1/4 teaspoon nutmeg.

Topping: 1/2 cup chopped pecans.

Instructions:

1. Prepare the Crust: Preheat the oven to 350°F (175°C). Mix graham cracker crumbs, sugar, and melted butter in a bowl. Press the mixture evenly into a 9x9-inch baking dish lined with parchment paper. Bake for 8-10 minutes until lightly golden. Cool completely.

1 bag (16 oz) frozen corn
2 ounces cream cheese, cut into chunks
1/4 teaspoon salt

Directions:
1. In a skillet pan, melt the butter and honey over medium-high heat. Once melted, add the frozen corn and cook for 5-8 minutes, stirring occasionally, until the corn is cooked through.
