90g melted butter
90 g sugar

140g all purpose flour

i tried to make purple korean corn dogs by using a ube hot cake mix! it was really fun 👹 i know the shape is a bit off haha but the combination of sweet ube flavor and savory cheese + sausage was tasty! For next time, i should reduce the amount of water to 80-100ml ish (i used 160ml of water) and refrigerate the batter for 20-30 minutes before frying.

Potato dishes from around the world pt. 5: Japan 🇯🇵 These POTATO MOCHIS were absolutely delicious! They had the perfect chewy texture and a nice savory flavor. For the best experience, make sure to serve them hot and enjoy them immediately.
Here are the ingredients you'll need:
450g russet potatoes
5 tbsp potato starch
a pinch of salt
mozzarella cheese
1-2 nori sheets for making stripes
butter or neutral cooking oil
For the sauce:
3 tbsp soy sauce
3 tbsp mirin
2 tbsp sugar
Now, let's move on to the instructions:
1) Start by cooking the potatoes until they are tender, and then allow them to cool down.
2)Peel the potatoes and mash them until smooth. Add the salt and potato starch, and knead the mixture well with your hands.
3) Take small portions of the potato mixture and form them into circular pieces. Place a piece of mozzarella cheese inside each circle, then seal and flatten the potato balls.
4) Heat some butter or neutral cooking oil in a frying pan over medium heat. Cook the potato mochis in the pan until they turn golden brown on both sides.
5) Once cooked, set the mochis aside and remove any excess oil from the pan.
6) Return the mochis to the pan and pour the soy sauce, mirin, and sugar mixture over them. Cook the mochis over medium heat until they are well soaked in the sauce, which should take about 3-5 minutes.
7) Finally, wrap each mochi with a nori stripe for added flavor and presentation.

ingredients:
120 ml soy sauce
120 ml mirin
A handful of bonito flakes
2 tbsp sugar (optional)
60 ml sake (optional)
Soba noodles for two servings
100 g Korean radish or daikon
1 green onion
Wasabi
Instructions:
1) Begin by preparing the soup base, known as "mentsuyu." In a pot, combine soy sauce, mirin, sugar, and bonito flakes. Place the pot over medium heat and bring the mixture to a boil. Once it starts boiling, remove it from heat, cover, and set it aside.
2) Grate the Korean radish or daikon and transfer it to a small bowl. Slice the green onion.
3) Cook the soba noodles according to the instructions on the packaging. After cooking, rinse the noodles under cold water and allow them to drain.
4) Remove and strain the bonito flakes from the sauce.
5) In a separate bowl, mix cold water with mentsuyu in a ratio of 2 parts water to 1 part mentsuyu.

POV: after watching @kenty_cook for 354 hours. I love his cooking 💓Today's recipe is Oi Guksu aka. cold cucumber noodles to make ur sweaty armits dry 👹 ingredients for 2 servings:
600ml ice cold water
1 cucumber
red radish (optional)
200g somyeon aka. Korean wheat noodles
For the soup base:
1 tbsp salt, 1 tbsp soy sauce, 2,5 tbsp sugar, 6 tbsp white vinegar, 1 tbsp sesame oil, 1 tbsp roasted sesame seeds
For the marinated cucumber
1 tbsp sugar (or sweetener of ur choice)
1 tbsp crushed garlic
¼ tbsp salt
3 tbsp white vinegar
2 tbsp of crushed sesame seeds
Start by cutting the cucumber in half. Then, take the first half and slice it into half-circle pieces. For the second half, cut it into thin strips. Put them into separate bowls.
Marinate the half-circle sliced cucumber: Grab a mixing bowl and toss them with 1 tbsp of sugar, 1 tbsp of crushed garlic, ¼ tbsp of salt, 3 tbsp of white vinegar, and 2 tbsp of crushed sesame seeds. Mix everything together well and set it aside.
Red radish: Slice it into thin strips and transfer them to a bowl. Don't forget to set it aside.
Get the noodles cooking according to the instructions. Once they're done, give them a quick rinse under cool water to get rid of any starch. Then, just let them rest for a bit.
Now, let's make a tasty sauce. Grab a bowl and mix ice-cold water with some salt, soy sauce, white vinegar, sugar, sesame oil, and sesame seeds. Give it a good stir.
