Broccoli Mushroom Salad Recipe🥦🥗
Ingredients:
- 1 cup broccoli
- 2 cups mushrooms
- 1/4 cup sweet corn
- 4 garlic cloves
- 1 cup lettuce
- 1 cup cucumber
- 5 cherry tomatoes
- 1/2 cup coriander
- 50g cottage cheese
- 1/4 cup low-fat Greek yogurt
- 2 tbsp olive oil
- Salt and black pepper to taste
Instructions:
1. Blanch broccoli and boil sweet corn.
2. Sauté blanched broccoli, mushrooms, and garlic in olive oil. Add salt and pepper.
3. Blend Greek yogurt, cottage cheese, coriander, garlic, olive oil, salt, and pepper for dressing.
4. Combine lettuce, cucumber, cherry tomatoes, warmed veggies, and dressing in a bowl. Serve.
