Last week, I ventured into a hidden alley in Guangzhou, where I tasted ‘La Chang’ (腊肠) for the first time—a savory, slightly sweet Chinese sausage that perfectly captures the essence of Southern Chinese cuisine. The balance of flavors was a revelation!
