There’s truly nothing better than walking into your home after a cold day outside to the smell of dinner on the stove. But, if you are the one who’s cooking dinner, that vision might be far from reality.
This slow cooker chicken taco soup created by Cailtin Boudreau, RD is sure to make your home smell great all day long. Wake up a little earlier than usual and simply combine all ingredients in the slow cooker and hit start. There’s no pre-cooking involved. Plus since many of the ingredients come from a can there’s also very little chopping involved making your prep time quick.
Makes 6 servings
Ingredients:
1 medium onion, diced
3 cloves garlic, minced
2 chicken breasts
1/2 tbsp chili powder
1 tsp cumin
1/2 tsp smoked paprika
1 15 oz can fire roasted tomatoes, with juices
1 10 oz can diced tomatoes, with juices
1 15 oz can black beans, drained and rinsed
1 cup frozen corn kernels
6 cups chicken broth
salt and pepper, to taste
Optional toppings:
Tortilla chips
Sour cream
Cilantro
Diced avocado
Lime juice
Directions:
Add all ingredients (except for toppings) to the slow cooker. Give everything a good stir. Place the lid on a slow cooker and cook on high for 4 hours, or low for 8 hours.
After 4 (or 8) hours are up, remove chicken and place in a large bowl. Shred it with a fork and return it to the slow cooker. Give soup a good stir. Taste and add salt as pepper, as needed.
Ladle the soup into bowls and add your favourite toppings: tortilla chips, a dollop of sour cream, cilantro, diced avocado and a squeeze of lime juice.
