JAPANESE CHEESE CAKE πŸ˜‹
Ingredients:
95g sugar
4 eggs
35g butter
175 g Philadelphia cheese
70g milk
1 tbsp grated lemon peel
40g flour
15 g cornstarch
Preparation:
1. We line the non-removable mold with baking paper.
2. We heat the oven to 150 ΒΊC.
3. In a pot we put water to boil, while in a bowl, we put the milk, the cheese and let it melt well.
4. Add the butter and let it cool.
5. Add the yolks to the liquids along with the lemon and mix well.
6. Sift the flour and Cornstarch, together with the previous mixture, avoiding leaving lumps.
7. While we separate the whites from the yolks and beat together with the sugar, until making a firm meringue.
8. When the meringue is ready, we add it to the cheese mass, and mix little by little, avoiding the meringue to lower.
9. We pour the dough into the mold, and put it on a baking tray, fill it with water, so that the cake cooks in a bain-marie.
10. Bake for 80 minutes in the oven. If it browns too much, put a little aluminum foil on top.
11. After 80 minutes, we open the oven door and wait 15 minutes before removing the cake.
12. Let it cool well and unmold.

CARAMEL FLAN πŸ˜‹

INGREDIENTS

1 liter of milk
7 egg yolks or units
150 grams of sugar (ΒΎ cup)
5 milliliters of vanilla essence
For the caramel:
100 grams of sugar (Β½ cup)
20 milliliters of caramel

INSTRUCTIONS

1. Beat the eggs with the sugar, until the sugar is completely dissolved.
2. Bring the milk to a boil and immediately add to the mixture, stirring constantly.
3. In a pan, arrange the sugar with the water, without stirring, until you get a caramel. Move the pan constantly to avoid burning.
4. Add the caramel in the mold, and quickly expand all over the base of it.
5. Add the flan mixture to the molds, place in the oven and cook in a bain-marie at 170Β°C for 45 minutes.
6. After this time, let cool at room temperature for 2 hours, carefully unmold the caramel flan. Keep refrigerated.

Butter Piped Cookies

Ingredients:
1 cup unsalted butter softened (226g)
3/4 cup granulated sugar 150g
1 large egg yolk
2 teaspoons vanilla extract
1/4 teaspoon salt

Fluffy castella sponge cake

Ingredients
6 egg whites
6 egg yolks
85 g sugar
80 ml of vegetable oil
90 g cake flour/sponge flour
70 ml of milk
1/4 tsp salt
Instructions
Beat the egg whites until foamy, then add sugar. Keep beating until still peak formed.
Heat the oil in a microwave for 90 seconds on high, or you can heat the oil on the stove for one minute. Add in flour and salt, mix well. Add in egg yolks and milk, mix until smooth.
Add meringue bit by bit into the batter, fold it gently.
Pour the batter into a lined baking tin, bang the cake tin for few times to release the air bubbles. Put the cake tin in a larger baking sheet, then pour hot water into it to make a water bath.
Pop into a preheated oven at 150C, bake for about an hour or until fully cooked.
Once it cooked, bang the cake tin a few times, this can prevent the cake from shrinking. Let it cool completely then slice it.

Raspberry Zinger Cheesecake

1. **For the base:**
- 200 g of Digestive biscuits or similar, crushed.
- 100 g of melted butter.
- 100 g of grated coconut.

2. **For the filling:**
- 500 g of cream cheese (Philadelphia type).
- 200 g of sugar.
- 4 eggs.
- 200 ml of whipping cream (milk cream).
- 1 teaspoon vanilla extract.
- 200 g of raspberry puree (you can use fresh or frozen raspberries, processed and strained to remove the seeds).

3. **For coverage:**
- 200 g of raspberry jam.
- Grated coconut to sprinkle.
- Fresh raspberries (optional).

1. **Prepare the base:**
to. Mix the crushed cookies, melted butter and grated coconut.
b. Press this mixture into the bottom of a springform pan. Refrigerate while you prepare the filling.

2. **Prepare the filling:**
to. Preheat the oven to 160Β°C (320Β°F).
b. In a large bowl, beat the cream cheese with the sugar until smooth.
c. Add the eggs one at a time, beating well after each addition.
d. Add the whipping cream, vanilla extract and raspberry puree. Mix until you obtain a homogeneous mixture.
and. Pour the filling over the base in the mold.

3. **Baking:**
to. Bake in the preheated oven for 45-50 minutes or until the center is almost set.
b. Turn off the oven and leave the cheesecake in the oven with the door ajar for about 10 minutes.
c. Take out of the oven and let it cool down. Refrigerate for at least 4 hours or overnight.

4. **Coverage:**
to. Spread the raspberry jam over the chilled cheesecake.
b. Sprinkle with grated coconut and decorate with fresh raspberries if desired.

HOMEMADE VANILLA COOKIES πŸ˜‹
Ingredients:
150g of sugar
250 g of wheat flour
150g butter
1 egg
1 tablespoon vanilla extract
1 small tablespoon of baking powder
Preparation:
1. Mix the sugar and butter in a bowl, using a wooden paddle or with an electric mixer.
2. Add the egg and vanilla to the mixture. Continue beating until a smooth, lump-free liquid mixture is formed.
3. Add the baking powder and wheat flour slowly, stirring constantly until you get a fine and homogeneous paste.
4. Put the vanilla cookie dough in the fridge for 2 hours to harden.
5. Preheat the oven to 180 Β°C or 350 Β°F with 10 minutes to go until the cooling time is up.
6. Take the dough out of the fridge and roll it out with the help of a rolling pin until it is the right thickness, 0.5 cm or less.
7. Cut the cookies with a mold, glass or knife depending on the shape and size you want to give it.
8. Grease a baking tray and place the cookies keeping enough distance between them, so that they do not stick when they grow.
9. Put the tray in the oven and cook for 15 minutes.
10. Remove the vanilla cookies from the oven and allow them to cool to room temperature.
11. Serve and enjoy.

Recipe:
*Flour - 200g
*Sugar - 200g
*Baking powder - 2teaspoons
*Butter- 150g
*Salt -1/2 teaspoon
*Eggs - 2 Large ones
*Vanilla extract - 1teaspoon
*Buttermilk - 150g
*Preservative - 1/2 teaspoon

Procedures πŸ‘‡
βœ“ Cream only the butter for 10mins, then add the sugar and salt and mix together until it's becomes soft, white and fluffy, there by allowing the sugar to dissolve very well( if u are mixing manually), but if u are mixing with machine, you whisk your butter for 10mins, then add your sugar and salt and whisk until white, soft and fluffy 😊

βœ“ Prepare your Buttermilk(i.e mixture of Vinegar- 2tablespoons and tin milk - 100g) and set aside

βœ“ Prepare your cake pan(i.e Rubbing your butter in the pan and sprinkle flour after that) and set aside

βœ“ Beat/whisk your eggs until foams and double it's size

βœ“ In the creamed butter and sugar, sieve in your flour, and add the whisked egg and mix, do this bit by bit until all mixture has been fully combined

βœ“ Add in the Vanilla extract and mix well, then add in the buttermilk and mix together but don't over mix🧏

βœ“ Pour the batter into the cake pan and bake in the preheated oven for about 45mins -1hr aleast, use skewer stick to test if the cake is ready by inserting it on the middle of the cake, after which you allow to cool before you start decorating as desired😊

CHOCOLATE CHIPS MUFFINS πŸ˜‹

INGREDIENTS

185 g of chocolate chips
300 grams of flour
2 eggs
140 grams of sugar
165 g of sunflower oil
16 g Royal yeast
1 tablespoon vanilla extract
140 ml of whole milk

INSTRUCTIONS

1. Preheat the oven to 180 Β°C and place our capsules in the cupcake tray, in this way we will prevent them from opening during baking. We booked.
2. In the mixer bowl, beat the eggs together with the vanilla extract, milk and sunflower oil. Then add the salt and sugar and mix well for a couple of minutes, until all the ingredients are integrated.
