Have you heard?!?! Photos are making a comeback ... and I like it! ✨️✨️✨️

I'm also liking this plate of jerk-tofu tacos inspired by Megan .for.the.food (check my story for the delicious deets!) 👆

My sauce is far from homemade, but I needed some jerk in my life, so I grabbed a bottle from the pantry and went to work! 👩🏼‍🍳

These beauties are filled w spicy heat, pops of sweetness and creamy sauce, using ...

🌽 Corn tortillas
🌶 vegan peri-peri aioli
🌱 extra-firm tofu ...double defrosted for texture and sponginess and marinated in 👇
🌶 Jerk sauce
🥬 Lettuce, purple cabbage and corn

The double defrost transforms the texture of tofu, ensuring a meaty bite. The bonus is the extra absorption powers this gives the tofu, making each bite a an absolute flavour bomb!!! 💥💥💥

Seitan Marsala! 🦊😋💥

I'm still tweaking this recipe, but kicking it off w a slab of is always a good start!!!! 🔥🔥🔥

I paired it w green beans tossed w roasted garlic and tomatoes alongside a stack of carmelized-onion potatoes ... SO 👏MUCH👏 FLAVOUR!! 👏

The sun peaking out these days, has me dreaming of summer!!! ⛅😎☀️

So here's a version of my summer pasta w a whack of all
sliced up and seared!!! 🦊🦊🦊🦊🦊🦊🦊🦊🦊🦊

I've made a few adjustments to the fixings for this version, but that's the beauty of this dish, just make it your own! 🍝🌱✨

When I created this recipe, I also made my first reel!!! I've shared it in my stories for you, so be nice!!! Hahaa 🙃

MAKE YOUR OWN Summer Pasta

🌱 Boil pasta for two to al dente and reserve 1/4 cup of pasta water

🌱 Prepare lemon garlic sauce: Mix 1T lemon juice, 1T olive oil, 2 minced garlic cloves, salt and pepper in a large dish and set aside

🌱 Toss cooked pasta in lemony garlic sauce and add the 1/4 cup of reserved pasta water - toss again!

🌱 Finish w any fixings you'd like!!! I recommend ...
1/2 cup fresh basil, 1 cup roasted tomatoes, 1/4 cup green onions a handful of arugula and spinach, and green onion - toss again!

🌱 If you prefer wilted greens, return to empty pot, cover and heat on low for a few moments. Keep an eye on it as you're only wilting! 👀 Add more oil if needed.

🌱 Finish w noosh and DIG IN!!

🌱 Optional, but a GREAT IDEA ... I added ALL the seared and sliced to today's lunch, taking this dish to the next level!!!! 🦊🤌💥

Flash Back Friday featuring 🔥🔥🔥

I indulged a healthy helping of my SEITAN roast aka "vegan meat mix" making a juicy roast w all the fixings!! 🥕🍚🥦😋 *check out my "making IT" highlight to see the mix go down!* 🦊💥

I made the roast per the instructions and topped it off w caramelized onions and vegan gravy! The grilled veggies and rice rounded this beauty out for that perfect punch of flavour and yum! 👊💥

Annnnnd I even had some juicy roast-y leftovers...perfect for all the sandwiches!!! 🤩🥪🤩

Tortilla chips piled high w black beans, ground round, cheese shreds, jalapeños, lettuce, tomatoes and ALL THE SALSA! 👊💥

I've been salsa-obsessed w my latest batch and I just finished every last drop!! 😋

I used restaurant-style nachos so that I could LOAD each one w every layer of yum ... I really hate when a nacho plate has naked nachos ... which is why I use this hack! 😜🤓
