So just a couple days ago we were buried in snow, Mike was stuck in a ditch, and a Hydro truck got stuck right in front of him , we lost power for almost 48 hrs, and now today we will hit a high of 20c, no snow on the ground and we are battling quite a few mosquitoes 🦟?? Welcome to Canada 🇨🇦 lol

When it’s -15 and 930 at night - the last thing you want is your power to go out like ours did last night! We are very thankful that we have many backups just incase! Fire, oils lamps, generator, to name a few. Reasons like this, are why we prepare.. BUT not everyone has access to those things! This year, I decided to try and grow sugar beets - to make my own home grown sugar. Thank you to hickorycroft for introducing me to them. It is quite a tedious experiment to try, but for me well worth it! First you need to grow them all summer long, then you need to wash them, peel them and grate them - I used a food processor for a faster result. Then, you need to cook them with water for a couple of hours. Then you need to strain that water and remove all the pulp. Wait we aren’t done yet. Then, you need to reduce the water as much as possible, then I added the thick syrup to the dehydrator for get this, almost a week - there is another way you can do this part but this is how I did it. All for less than a cup of sugar. (My big red oval Dutch oven was full of pulp) would I do this again, yes I think I would but on a much grander scale. But at least this year, I’ll enjoy my own homemade sugar in a few coffees, because I can’t really bake a cake🤷‍♀️
