🔥 Did you know the picanha cut, a crown jewel in Brazilian BBQ, has roots that stretch deep into South American culinary traditions? Historically, Brazilian cowboys, known as “gaúchos”, would herd their cattle across the vast grasslands. To feed themselves during these long treks, they’d grill cuts of beef over open flames, and picanha - with its rich fat cap - soon emerged as a favorite for its unbeatable flavor and tenderness.

But why the iconic sword-style skewer? The simple genius of this method is that the meat’s succulent fat cap melts and bastes the meat while it cooks. By skewering picanha on these long swords and roasting it over an open flame, the beef gets infused with a smoky richness, while the fat crisps to perfection. It’s a tradition that’s not just about taste but a nod to the cowboy culture and their resourceful, rustic cooking techniques.
