চট্টগ্রামে সহ সারাদেশে ভাতঘর বলে কিছু খাবারের দোকান আছে। ভাতঘরের বিশেষত্ব হচ্ছে এখানে কোন নাস্তা হয়না, শুধুই ভাত। সাথে সিজনাল সবজি, ভর্তা, ভাজি, গরু, মুরগী, মাছ সবই পাওয়া যায়। অনেকটা ঘরোয়া মেজাজে রান্না হয়। অনেকের নিয়মিত দুপুর বা রাতের আহারের ভরসা এসব ভাতঘর।

চট্টগ্রামের ঐতিহ্য ২০০ বছর প্রাচীন গণি বেকারির বেলা বিস্কুট

২০১৮ সালে ভিডিওটি ধারণের সময় কথা হয় গণি বেকারির বর্তমান কর্ণধার আবদুল্লাহ মোহাম্মদ এহতেশাম এর সাথে। গণি বেকারির প্রতিষ্ঠাতা আবদুল গণি সওদাগর তার বাবার দাদা। সে হিসেবে তিনি চতুর্থ প্রজন্ম। আমাদের প্রথম দিককার এই ভিডিওটিতে তুলে ধরা হয়েছে, গণি বেকারির ইতিহাস ও তাদের ভবিষ্যত পরিকল্পনা।

গণি বেকারির সংক্ষিপ্ত ইতিহাসঃ
ব্রিটিশ আমলেও তৎকালীন চট্টগ্রাম পৌরসভার মানুষের খাদ্যাভ্যাসের তালিকায় ছিল বেলা বিস্কুট। আর গণি বেকারির হাতে ধরেই বেলা বিস্কুটের প্রথম প্রচলন হয় চট্টগ্রামে।

পূর্বপুরুষের হাত ধরে ১৮৭৮ সালে বেকারিশিল্পে যুক্ত হন আবদুল গণি সওদাগর। বর্তমানে যে স্থানে ভবনটি অবস্থিত, একতলা সেই বেকারি ভবনটি তৈরি হয় ১৯১০ সালে।

গণি বেকারির হাত ধরে বেলা বিস্কুটের প্রচলন শুরু হলেও ধীরে ধীরে সব বেকারিতে তৈরি হয় এই বিস্কুট। ১৯৩৯ সালে দ্বিতীয় বিশ্বযুদ্ধের সময় বেকারিশিল্পের প্রসার ঘটে চট্টগ্রামে। গণি বেকারি থেকে ব্রিটিশ সৈনিকদের জন্য বেকারির পণ্য তৈরি হতো।

যদিও ঠিক কখন গণি বেকারিতে বেলা বিস্কুট তৈরি হয় তার সঠিক তথ্য নেই। তবে মোগল আমলের শেষদিকে ও ইংরেজ আমলের শুরুতে ভারতের বর্ধমান থেকে আগত ব্যক্তিরা এই বেকারিশিল্পের সূচনা করেন চট্টগ্রামে। সে হিসেবে বলা যায়, চট্টগ্রাম অঞ্চলে বেকারিশিল্পের যাত্রা শুরু হয় প্রায় ২৫০ বছর আগে।

The day 1st me & my friend Raisul Islam talked about creating "Plates of tradition " while both coming from Dhaka to Chittagong by bus.

We started Plates of tradition project from 2019 after we found Shamim Riaz (Director,Editor).
