Christmas Vanilla Cupcakes 🎄🧁
These Christmas Vanilla Cupcakes are the perfect festive treat—fluffy, light, and topped with creamy, decadent cream cheese frosting. With a subtle vanilla flavor and a sweet finish, they’re a great addition to any holiday celebration!

Ingredients:

For the Cupcakes:

½ cup buttermilk, room temperature 🥛
½ cup butter, softened 🧈
2 large eggs, room temperature 🥚
2 teaspoons pure vanilla extract 🍨
1 ¼ cups all-purpose flour 🍞
¾ cup sugar 🍬
1 ¼ teaspoons baking powder 🧂
½ teaspoon salt 🧂
For the Cream Cheese Frosting:

½ cup butter, room temperature 🧈
8 oz cream cheese, room temperature 🧀
4 cups powdered sugar 🍚
1 teaspoon vanilla extract 🍨
Powdered sugar, for garnish 🍚
Fresh raspberries, for garnish 🍇
Instructions:
1️⃣ Preheat the Oven:
Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.

2️⃣ Prepare Dry Ingredients:
In a medium bowl, combine 1 ¼ cups of flour, 1 ¼ teaspoons of baking powder, and ½ teaspoon of salt. Set this mixture aside.

3️⃣ Cream Butter and Sugar:
Using an electric mixer, beat the butter and sugar together on medium-high speed for about 5 minutes until thick and fluffy. Scrape down the sides of the bowl as needed.

4️⃣ Add Eggs and Vanilla:
Add the eggs one at a time, beating well after each addition. Mix in the 2 teaspoons of vanilla extract.

5️⃣ Combine Wet and Dry Ingredients:
Lower the mixer speed to medium. Gradually add the flour mixture in three parts, alternating with the buttermilk. Mix until incorporated, being careful not to overmix. Scrape the bowl as needed.

6️⃣ Fill Muffin Pan:
Evenly divide the batter among the 12 cupcake liners, filling each about two-thirds full.

7️⃣ Bake:
Bake for 20-23 minutes or until a toothpick inserted into the center comes out clean. Allow the cupcakes to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.

8️⃣ Make the Cream Cheese Frosting:
In a large bowl, beat together the room-temperature cream cheese and butter until smooth. Gradually add the powdered sugar, one cup at a time, until fully incorporated. Mix in the vanilla extract and a pinch of salt.

9️⃣ Frost the Cupcakes:
Transfer the frosting to a piping bag fitted with a large French tip. Pipe the frosting in a swirl pattern on top of each cooled cupcake.

🔟 Garnish and Serve:
Garnish with powdered sugar and fresh raspberries for a festive touch.

Storage:
Store the cupcakes in an airtight container at room temperature for up to 3 days, or refrigerate them for up to 5 days.
