INGREDIENTS
PASTRY
1 cup plain flour
¼ cup vegan butter
¼ cup icing sugar
1 pinch of salt
2–3 tbsp plant-based milk, chilled
FILLING
½ tsp ground turmeric
3 tbsp cornflour
3 tbsp plant-based milk
1 cup coconut cream
¾ cup caster sugar
½ cup lemon juice
1 tbsp lemon zest
½ tsp agar agar powder
METHOD
1. Preheat oven to 180°C.
2. Place all pastry ingredients in a food processor except the milk. Pulse until a breadcrumb consistency forms, then gradually add cold milk and pulse to combine.
3. Remove blade from food processor and use your hands to clump the pastry dough into a rough ball. Turn out onto bench and roll dough out to form a 3mm thick round (a little larger than the tart tin).
4. Brush a 20cm loose-base tart tin with a little vegan butter. Press rolled-out pastry evenly into base of tin and up the sides. Cut excess pastry from around top of tin.
5. Lay a sheet of baking paper on top of pastry and cover base of tin with blind-baking beads. Bake for 30 minutes. Once out of the oven, remove the blind-baking beads and paper, and set aside to cool.
6. To make the filling, combine turmeric, cornflour, and milk to form a paste. Add paste to a saucepan along with all other filling ingredients and stir to combine. Place on a medium heat and stir continuously until the mixture thickens. Pour the lemon filling into the cooled pastry and refrigerate overnight. Serve chilled, garnished with thin slices of lemon and a sprinkle of caster sugar.

INGREDIENTS
1 zucchini
1 cup rainbow baby carrots
3/4 cup cooked quinoa
1/2 cup hummus
1 avocado
Handful of mint leaves and parsley leaves
METHOD
1. Thinly slice zucchini into 0.3 inch slices
2. Mix quinoa and hummus together, spread on a thick layer
3. Add veggies, herbs, avocado, and roll up
4. That’s it! Enjoy!

Chilly mid-winter afternoons call for a deliciously warming mug of hot chocolate, and this recipe by the wonderful Jade at Panaceas pantry has become our go-to. It’s the ultimate cold weather treat!
INGREDIENTS
200ml plant-based milk of choice
1 tbsp hulled tahini
2 tbsp raw cacao powder
A few squares of your favourite dark chocolate
A pinch of salt
3-4 cacao butter buttons
1 tsp pure maple syrup.
1. Add milk, tahini, cacao powder and maple syrup to a pan. Heat over medium heat, whisking throughout. As the milk starts to move and create some small bubbles, turn off the heat.
2. Add all remaining ingredients and then blend with a stick blender until thick and creamy. Taste, add extra sweetness as desired. Choose your favourite mug, pour and enjoy!
