*Mongolian Beef Recipe*

*Ingredients:*

- 1 lb beef (sirloin or flank steak), sliced into thin strips
- 2 tbsp vegetable oil-
- 1 tsp grated fresh ginger and garlic
- 1 cup mixed bell peppers (green, red, yellow)
- 2 green onions, chopped
- 2 tbsp soy sauce
- 1 tbsp oyster sauce
- 1 tsp sesame oil
- Salt and pepper, to taste

*Instructions:*

1. Slice beef into thin strips, chop bell peppers, and green onions.
2. *Cook beef*: Heat 3 tbsp of vegetable oil in a wok or large skillet over medium-high heat. Add beef and cook until browned, about 3-4 minutes. Remove from wok and set aside.
3. *Cook aromatics*: In the same wok, add the remaining 1 tbsp of vegetable oil. Add minced garlic and grated ginger, and cook until fragrant, about 30 seconds.
4. *Add bell peppers*: Add mixed bell peppers to the wok and cook until they start to soften, about 2-3 minutes.
5. *Combine beef and vegetables*: Add cooked beef back into the wok, along with chopped green onions, soy sauce, oyster sauce (if using), and sesame oil. Stir everything together to combine.
6. *Season and serve*: Season with salt and pepper to taste. Serve Mongolian beef hot over steamed rice/ noodles/ salad.

*Tips and Variations:*

- Use a variety of colourful bell peppers to add visual appeal.
- Add other vegetables like carrots, mushrooms, or zucchini to increase nutrients.
For a spicy kick, add red pepper flakes or sriracha to the dish.

Here's a simple butter chicken recipe for beginners:

Ingredients:

- 1 1/2 pounds boneless, skinless chicken breast or thighs, cut into bite-sized pieces
- 1/2 cup plain yogurt
- 2 tablespoons lemon juice
- 2 teaspoons garam masala
- 1 teaspoon cumin powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 2 large onions, chopped
- 2 cloves garlic, minced
- 2 medium tomatoes, diced
- 1 tablespoon butter
- 2 tablespoons vegetable oil
- 2 tablespoons tomato puree
- 1 tablespoon butter

Recipe:

1. Marinate the chicken in yogurt, lemon juice, garam masala, cumin, salt, and black pepper for 30 minutes.
2. Heat 1 tablespoon of oil in a pan over medium heat. Cook the chicken until browned and cooked through.
3. In the same pan, cook the sliced onions until lightly browned.
4. Add garlic and cook for 1 minute.
5. Add diced tomatoes and cook until they start to soften.
6. Stir in tomato puree, butter, and cooked chicken.
7. Simmer for 5-7 minutes or until the sauce thickens slightly.

8. For a richer sauce, add 1-2 tablespoons of heavy cream or coconut cream.
-You can adjust spice levels to your taste.
- Serve with basmati rice or naan. Enjoy
