Today’s video is a quick dinner recipe using my Hello Fresh meal kit subscription box. Its 100% plant based suitable for vegans and vegetarians.

Sticky Tofu and Garlicky Greens Stir Fry

Calories: ~780 cal
Protein: ~37 gms

Ingredients: (Adjust quantities according to your macro)

• White rice
• Brocolli
• Green Beans
• Garlic
• Japanese Tofu (You can replace with chicken or salmon)
• Asian Mushroom Sauce
• Ginger paste
• Aoli (You can use greek yoghurt for extra protein)

Instructions:

1. Rinse and cook the rice
2. Chop the brocolli, trim the green beans, cut the tofu in small chunks
3. Add 1 tsp olive oil in a non stick pan and sauté the brocolli and green beans
4. Add garlic, salt and pepper.
5. Make the sauces with the mushroom sauce, ginger paste and brown sugar. Set aside
6. Return frying pan to high heat with a drizzle of sesame oil. Cook the tofu until browned.
7. Serve up.

Ordering Meal kits online was a new concept for us and in 2020 we finally gave it a go. Being extremely time poor, throw in COVID-19, grocery shopping had become a massive chore. We were not only spending money on grocery but also eating out a lot just for comfort and convenience. Our waistlines were getting thicker and bank balance leaner.
