Choc Protein Yoghurt 😋

My latest obsession, kills the sweet tooth cravings with a kicker protein boost! Just mix 1 cup high protein greek yogurt + 1/3 cup hazelnut chocolate spread (we used Pana organic) together and enjoy. I like mine on cereal with fruit- soooo delish!

Easy Rice Noodle Salad!

Summer is upon us and this fresh, and easy Rice Noodle Salad made with Wokka rice noodles is the perfect dish to serve up on a warm day. You can find the full recipe on the back of the pack, or you can cheat like us and make it as we have here 😉. You can find the Wokka Noodles] range of noodles at your local Coles, Woolworths or local independent supermarkets!

EASY RICE NOODLE SALAD

-440g pack of Wokka Rice Noodles
-250g pack of pre-packaged Superfood Salad/ Stir-Fry Mix
-2 cups of shredded BBQ chicken
DRESSING:
-2 Tbs each of: soy sauce, fish sauce, lime juice, caster sugar & crushed ginger, 1 Tbs sesame oil

INSTRUCTIONS:

1. Prepare rice noodles as per pack instructions and add to a bowl.
2. Add superfood salad/ stir fry mix and chicken to the bowl of noodles.
3. Combine all dressing ingredients in a smaller bowl and whisk to combine.
4. Pour dressing over noodle salad and toss all ingredients together.

A delicious nutrition powerhouse, Macadamias are the quintessential native Australian nut, and they really shine in this Rustic Macadamia & Strawberry Crostata. An easy dessert recipe that is sure to please, try it today using Sunbeam Foods] Australian Macadamia Halves. Look out for the new red packaging of the Sunbeam nuts range, available in Coles now!

🍓 Rustic Macadamia & Strawberry Crostata Chocolate

* 110g Sunbeam Macadamia Halves
* 1 cup icing sugar, sifted
* 1 egg, separated
* 1 sheet short rust pastry
* 400g strawberries, hulled, halved
* 1 tbs brown sugar
* Vanilla ice cream, to serve

1. Preheat the oven to 200°C. Place macadamias and icing sugar in a food processor and whiz until finely crushed. Transfer to a bowl, add egg white only (save egg yolk for later) and mix until just combined.
2. Trim the edges of the shortcrust pastry to form a circle, place on a piece of baking paper and place on a pizza tray.
3. Spread the macadamia paste over the pastry, leaving a border. Arrange the strawberries over the top of the paste and fold the border over the strawberries to partially enclose.
4. Beat the egg yolk and a splash of water in a small bowl and brush the edges of the pastry with egg wash. Sprinkle the brown sugar over top.
5. Bake on the centre rack, for 40 minutes or until golden. Slice, and serve warm with ice cream.

One pan warm grilled chicken salad 🥗. You can adjust to suit your own taste, but here’s how we made ours.

1. In a grill pan, cook 4 sliced and marinated chicken breasts.
2. Remove chicken from pan and set aside.
3. Add a little oil to the pan, throw in a salad kit (we’ve used a kaleslaw salad kit here) and toss until gently heated through. Add in whatever other veg you feel like, we’ve added some capsicum here.
4. Add chicken back in to the pan and stir to combine.
5. Serve with your choice of dressing, or with flatbread and sauces for self serve wraps!

Are you feeling the pinch from the rising cost of food yet? $100 worth of shopping just doesn’t go very far anymore! But switching to for groceries can save the average family a massive $2,468 a year if they usually bought branded items. That's a 24.7% price gap 😲.

We tested that claim and really did make our dollar stretch further at ALDI. With $100 we were able to make 7 full dinners with plenty of food left over to create other meals. This creamy Chicken Alfredo Pasta and hearty Beef Stroganoff were just two of the delicious meals we enjoyed last week!

At ALDI, fresh meat & fish is 19% cheaper and fruit & vegetables are 18% cheaper when compared to the branded equivalent at other supermarkets! And with the way things are going, I know where I’ll be shopping to get more bang for my buck! 🛒

With the cost of living rising by the day, we’re always looking for ways to reduce our expenses. And as a family of 6, $100 worth of shopping just doesn’t go very far anymore! But we've made our dollar streeeetch further at , look how much we were able to get with a little over $100 (the Manuka 🍯 bumped us over $100, but you can’t get Manuka honey for only $9.99 anywhere else?!).

At ALDI, fresh meat & fish is 19% cheaper and fruit & vegetables are 18% cheaper when compared to the branded equivalent at other supermarkets! Switching to ALDI for groceries can save the average family a massive $2,468 a year if they usually bought branded items. That's a 24.7% price gap 😲.

So with our ALDI haul, this is what’s on the dinner menu this week!

1️⃣ Beef lasagne with garlic bread and salad
2️⃣ Beef stroganoff with rice
3️⃣ Grilled chicken wraps
4️⃣ Mexican beef mince (for tacos, burritos or burrito bowls etc)
