Everyone is obsessed with the big salad bowls. This salad is both calorie friendly and deliciously filling 😊 The recipe and photo is by When Harry Met Salad

What's in this?
- 2 handfuls of baby spinach
- 1/4 Chopped Red Onion
- 60g Edamame Beans
- 60g Spicy Beets
- 100g Chicken Breast
- 1 Chopped Carrot
- 125g Moroccan Bulgar Wheat
- Chopped parsley

Dressing:
- Juice of 1 Fresh Lemon
- 5ml Organic Avocado Oil

Toss this all up and voila! Soooo tasty and filling!

Here's the recipe for Strawberry Creamy Galette 😄 just because sometimes we need something sweet to keep you moving! 😂

Strawberry Creamy Galette:
1 vegan puff pastry
2 cups of chopped strawberries
4 tablespoons of chia seeds
2 tablespoons of stevia or any sweetener
1 pack of vegan cream cheese

Place strawberries and sugar in a sauce pan. Let it sit for about 5 minutes. Cook over medium heat for 8 minutes. Remove from heat and stir in the chia seeds. Put in the refrigerator for 1 hour.

Preheat oven to 350 degrees. Line up a tray with parchment paper. Spread cream cheese over a puff pastry sheet. Place strawberry jam on top of cream cheese. Fold the corners and brush with coconut oil. Sprinkle some sugar and bake for 20 minutes.
