Pote Asturiano, a comforting stew of beans, collard greens, blood sausage, and chorizo, has warmed Asturias' mountains for generations.
Slow-cooked over a fire, it was the perfect meal for shepherds facing harsh winters.
An interesting fact: originally, potatoes weren’t in the recipe—chestnuts and acorns were used instead. Some places in Asturias still serve it with chestnuts today!
